Ethanol is nothing but alcohol.  The production process is similar to making other alcohol (brewing).  You use the sugar from the sugarcane to feed oxygen starved yeast which is added to a pulvarized mixture of water and sugarcane.  The yeast feeds on the sugar and gives off alcohol and carbon dioxide (fermenting).  The alcohol evaporates and is collected and filtered.
