  1. Your question is a bit confusing. It sounds like you have:

    1) a HDTV with an HDMI input

    2) an HDMI cable

    3) a fiber-optic audio cable

    4) a regular 3-plug ps3 composite a/v cable

If your TV is a normal tv, it has an HDMI input and likely component and composite, and regular a/v, but not optical audio. Optical audio usually is found on home theater receivers. By the time HDTV's were mass-produced, they had HDMI which worked just as well so they didn't bother with digital audio inputs. Anyway, a decent surround sound system will completely bypass the sound system of your TV. They just aren't made with full surround.

So what you didn't say is what I'm wondering, have you got a receiver? It wouldn't make much sense using optical audio if you don't have the receiver to decode and amplify the sound. In any case,  it is indeed possible, if you've got the receiver and it's hooked up right, all you have to do is leave video at HDMI then switch audio to optical.

If you can't get that working, you could at least route the sound through the A/V cables and get analog surround. It's not digital surround but it'll still sound good for a tv of your size.

And if you're just using the speakers on your tv, believe me it makes el zippo nada difference whether you're using digital surround or not in that case. The TV's themselves typically have no better than MTS stereo.
