Puerto Ricans: I need Puerto Rican Entree recipies!!!?

I'am having family over tonight and I need Puerto Rican Recipes...anything but fish!!

I would really appreciate any recipies and help

  4. Escoviche and some salad

    1/2 onion, sliced in rings

    1 red pepper, julienned

    1 Lime

    1/4 cup white vinegar

    1 tsp sugar optional

    1/2 lb. finger sized fresh sea smelts, cleaned and patted dry

    1/2 cup corn starch

    Saute the onions and peppers in a tablespoon of oil for a few minutes, till just slightly softened. Remove from heat, add lime, sugar and vinegar, and set aside in a covered casserole dish.

    The smelts—make sure you dry the inside cavity to prevent splatter. Season with salt and fresh pepper, then coat lightly with corn starch. Fill a pan 2/3 inch with oil, and heat. Slip in smelts and fry until golden on the edges. When done transfer on paper towels. When slightly cooled, put smelts in a deep dish and cover with onion pepper vinegar. Let marinate for a bit before serving. The longer it sits in the vinegar, the better.

    I would make chuletas otherwise known as pork chops (brine them in salt water for about two hours then rinse and dry and sprinkle with salt and pepper and minced garlic.  Refrigerate for about an hour or so to let the garlic flavor seep in, then remove the garlic and fry in a little oil, you may coat with flour but it's not necessary) , with red beans and rice, and fry some sweet plantians........make a ajo of olive oil and garlic add some salt and a splash of vinegar (this is like a dip/sauce for the chops and plantains, well really for anything).  

    Just have some pound cake and coffee for dessert.
