how do i make like those really puffy and deliciouse pancakes???

  1. These are so good - light, puffy and delicious:

    German Pancake

    3 large eggs

    1 tsp salt

    ½ cup flour

    ½ cup milk

    1 tsp pure vanilla extract

    Butter

    Powdered sugar

    Jellies, Preservers and/or Jams of your choice

    Maple syrup

    Preheat oven to 400 degrees F and grease or spay with no-stick spay either a (9-inch pie plate or cast iron skillet. Drop a pat of butter into the bottom of the cooking vessel and place into the preheated oven while mixing the pancake batter.

    In a medium sized bowl, beat eggs, salt and vanilla then, using a wire whip/whisk beat in the flour – do not worry if it is lumpy but get all the flour mixed in – then beat in the milk – mixture will be smooth once milk is entirely incorporated.

    Remove cooking vessel from oven, swirl the melted butter to cover the bottom then pour in the batter.

    Place in oven and cook for 25 minutes. The pancake will puff up around the sides and sometimes in the middle and should be nicely browned around the edges.

    Place cooked pancake on a dinner plate and place any of your favorite toppings on it – I like mine with just lots of butter and powdered sugar.

  2. 2 cups flour

    3 teaspoons baking powder

    1 teaspoon salt

    1/4 cup sugar

    1/4 cup butter

    blend the dry ingredients, and cut in the butter with a fork or pastry blender. til it resembles very fine corn meal.

    Put one cup milk in a 2 cup measure and add 2 eggs. beat until eggs are blended with the milk. Stir this into the pancake batter til it is fairly smooth, may need a bit more milk, maybe not. Thicker batter takes longer to cook, but cooks fluffier. Thinner batter makes like crepes.

    Put about 1/4 cup batter on hot griddle, let it cook til the edges are dryish and there are noticible bubbles in the middle. Flip and cook the other side. I do these on medium high heat on cast iron griddle.

    Puffy Surprise Oven Pancakes

    Ingredients

    2 eggs

    1/2 cup all-purpose flour

    1/2 cup milk

    2 tablespoons margarine or butter

    4 cups sliced fruit (Use any of the following strawberries, pineapple, bananas, raspberries, peaches, blueberries, pears)

    1/2 cup firmly packed brown sugar

    1 (8 ounce) container sour cream

    Directions

    1. Heat oven to 425*.

    2. In medium bowl, beat eggs slightly.

    3. Add flour and milk; beat with rotary beater until combined.

    4. In oven, melt 1 tbls.

    5. margarine in each of two 9-inch glass pie plates; spread to cover bottom.

    6. Pour batter over margarine in pie plates.

    7. Bake at 425* for 10 to 15 minutes or until golden brown.

    8. (Pancakes will form a well in the center and edges will puff up.) Spoon fruit into center of pancakes.

    9. Sprinkle with brown sugar and top with sour cream.

    10. Serve immediately.

    11. Yield: 4 servings

  4. dont overmix batter - i use aunt jamaima &#039; just add water&quot; they are good!

    get pan really hot then use cooking spray to grease pan

  5. A friend used to put 3 eggs in her pancake batter...they were unbelievably puffy.

  6. Try a simple mix, like Bisquick. It&#039;s easy to follow and they really taste good. Also, a little splash of real vanilla extract in the mix helps to puff them up, plus it adds flavor. good luck

  7. Use lukewarm water in you batter. It causes the yeast in the batter to starting working quicker.

    You will have to let them cook a little longer before flipping them
