Put fresh green beans in bucket and put in freezer 4 days later got them out to can . they were mushy

  1. Yes,they would be. You would have to blanch them before putting in the freezer.


  2. When they froze, the ice crystals punctured the cell membrane.

    When they thawed out, they had no more structure.

    You run into the same condition when you refreeze vegetables that were flash-frozen (frozen so fast that ice crystals did not have time to grow)

    To save the situation, use them in a stew or other long cook food where you want the flavor and nutrition value, but not the crunch of a fresh vegetable (that is gone forever).
