What kind of cheese is used to make quesadillas in Mexico?

  3. You can use any kind of cheese. There are several types of Mexican cheese in the dairy aisles to use. One is a crumbly cheese and the other melts better. Can't remember the names off hand.

  8. It's called Asadero.  It's also called queso because it is used in quesadilla's.  Substitutes are Monteray Jack or Fontina.

  9. According to Wikipedia, "quesadilla" means something different in different regions of Mexico.

    They don't have the same kinds of cheese we have here. Often they use a crumbled fresh cheese that doesn't melt as much as our Monterey jack does. They don't have "American" cheese, either. Use whatever kind of cheese you like.
