Question about Pizza Dough?

it seems like when i make pizza dough at home when i go to stretch it out to the size of the pizza i want it is a huge pain. When i watch the guys at the pizzeria down the road the dough stretches so easily and doesnt retract back to the originol size. What could i be doing wrong, Rising time? Indrediants?Techniques?i am going for a new york/ new have type pie

  1. After it has risen, try leaving in on the counter for about 30 minutes before you try stretching it onto a pizza pan.  I find that helps me when making pizza at home.

  2. flour and salt are major

    mix very well let it sit in the fridge get cold then let it rise in the kitchen

    take the ball of dough flatten it with a rim about 5 inches across flip it over do the same when pulling do with both hands dont do it in the pan

    the dough should weigh about 2 pounds

  3. Dough is easier to stretch when its room temp. If you still can't stretch it, it's to dry.

  4. work the dough as little as possible and age it over night.

    use lots of flour and your fingertips to shape it then stretch it on the back of your hands.

  6. your dough is too dry, work with less flour and it should work! you can also buy prepackaged dough and just add water and that works great!

  9. I worked in a pizzeria for a few years. They dough they use looks dry because it's covered in flour to keep it from sticking to the chef's hands. Make your dough a little more moist, and ensure that it is warm before you start to try and stretch it. Cold dough just won't go :-P
