How do vegan cakes rise if no egg products are used?

    lol.

    I'm kidding. Eggs are not the only agents that make a cake rise. You can use a combination of:

    2 tablespoons of water

    1 tablespoon of oil

    2 teaspoons of baking powder

    That is the equivalent of 1 egg.

    You can also use 1 tablespoon of ground flax seeds and 2-3 tablespoons of water. That is also equal to one egg.

    There are (of course) egg replacers as well.

    There are a host of other options. I just gave the two that I've used. If you Google it, I'm sure you'll find a lot of other options - it's probably stuff you already have in your cupboard.


  2. Cakes do not need eggs to rise.  Eggs in a cake are used for binding.  Baking powder and baking soda are used to help cakes rise.

    I was so glad to learn this.  However, it hasn't helped my waist line since I learned how to bake tons of yummy vegan cakes and muffins.

  3. There are many ways to substitute eggs in baking.

    I personally prefer Ener-G Egg Replacer, as it's easy, the stuff lasts forever, and it's pretty cheap.

    You can also take 1 tbsp flax seeds and 3 tbsp water per egg, make a slurry, and then add to the batter.

    You can also use 1/4 cup silken tofu per egg.

    Some people say use a banana or applesauce, but those just don't work for me--a banana would impart the flavor of the fruit, which is not always a good thing in some recipes.
