Question about canning salsa?

I'd like to can salsa.

I've got a bunch of mason jars, but have heard the lids can only be used once.

Is this true?

  1. The lids should only be used once,  especially for acidic foods like salsa.  If you want to use them a second time inspect them carefully.  If the inside surface has even a tiny scratch the lid will rust quickly if reused.  The price of new lids is so small it isn't worth the risk of reusing them.  


  2. This is true.  Once they are used, they may not seal properly the second time.  Don`t take the chance, could cause an illness that way.

  3. limnot22--- the "flats " that is the small flat disk with the rubber gasket around the edge can be used only once. The "rings" that is the part that screws onto the jar can be used several  times.

    Untill they become rusty. We caned tomatoes this AM. and used older rings but we let the caned product sit in storage for 10 - to 15 days

    then remove the rings the jars are sealed good by that time and the rings are good for several other cannings. jim b
