Question about corn tortillas?

I live in Thailand and I cannot find corn meal of corn flour.They have bags that say corn flour but it's really corn starch.So,I am wondering how hard it is to do it the old fashioned way and dry the corn on the cob and then pound it with a mortar pestle so to make my own corn meal.I miss Mexican food desperately.So I am willing to do what I can to eat it again.Most Mexican restaurants in Thailand are owned by Europeans who have no clue about how to make the food correctly and it's gross.

Does anyone have any advice for me?

  4. It is hard work to make corn tortillas from scratch. Your best bet would be to find a store that Carry's Mexican staples. You know you could ask some one to send you some through the mail. It can be done. Have you tried to make flour tortillas? All you need is flour baking,  powder, salt, lard and some warm water. You can make them and have your self some burritos or flautas or what ever you like. You can even make chimichangas. The combinations are endless!

I had the same problem when I first came to the Middle East three years ago, but fresh corn tortillas have been turning up in the supermarkets in the last month!  So don't despair.  I would NOT recommend tryint to make corn tortillas the "old-fashioned" way.  It is much, much more difficult than you can imagine.  Instead, find a market that caters to Westerners and see if they carry frozen corn tortillas.  The markets over here that cater to Brits and Americans did have frozen tortillas long before they started carrying fresh. You may find them this way.  Or talk to the manager in such a market and see if they will get them for you frozen.  This is easier for them to do because they don't have to worry about spoilage. If the markets in this part of the world carried them frozen, there is hope for Thailand I would think!  Good luck.  I used to live in The Mission in San Francisco and I know how it feels to miss good Mexican food.  I used to constantly dream about it!

  7. I know exactly how you feel. When I arrived in Switzerland I ran into the same problem. I asked to speak to the manager and since then they now have a small Mexican food section next to their "exotic" foods. I have given Mexican cooking classes in my home so there are more and more people using these products, which in turn keeps the shelfs ready for happy customers. No luck so far with the corn tortillas however. I tried a factory that caters to their "mexican restaurants" and they now ship to my door! Good luck. The Mexican restaurants suck here as well.
