when you go jet skiing with two people, what is the person on the back supposed to hold on to?

A number of things. They can hold on to the person in front of them, the handle on the back of the jet ski, or you can buy a "rubber band like" band to go around the seat that they can hold on to. That's what I would recommend.

There are handles on the side of the seat. Just reach down and slide your hand up the side until you find it.
