  1. The components of milk vary.  There is no set molecular structure.  Milk contains calcium, protein, saturated fats, and vitamin C.

    Was that a question for school?  If it was, it's a weird way of putting things from a school point-of-view.

    The other question, regarding emulsifying agents, is a good one.  If an agent, or substance, is capable of emulsification it means it's soluble in both fat and water.  Fat, for example, is uniformly dispersed in water and is referred to as an emulsion.  Some examples of emulsifying agents are butter, ice cream, and mayonnaise.
