  1. An entry in a race is two or more horses owned by the same owner and usually, but not always, trained by the same trainer.  They run under the same number, with a letter designation added for the second horse.  For instance 1 and 1A. If there are two sets of entries, the second set would be 2 and 2A.  They are counted as a single wagering interest, so if you place a bet on the 1 to win, the bet will pay out even if the 1A wins instead.  Very rarely will 3 horses run as an entry, in which case there would be a 1B.

Yes, jockeys are independent contractors, so they are not required to ride the same horse in every race, unless they have a contract to do so.  Usually the trainer will offer the same horse to a jockey race after race, unless he is unhappy with the way the jockey rode previously.  But sometimes there is a conflict when the same rider is the normal rider for more than one horse in a race.  In that case, the jockey will usually choose the horse that he feels has the best chance to win.  Sometimes, though, he'll chooses the stable who gives him the most good horses to ride instead.

  2. An "entry" is when two stablemates are entered in the same race together...  You've seen when instead of being a different number one horse will be #1 and another will be 1A...  that's because the two horses were an entry.  Sometimes they'll enter two horses in the same race so that one can set up the race for the other.  I don't know anymore about it than that.

Of course a jockey will ride different horses in different races!  Jockeys ride in almost all the races on the card at the track that day.  They go out, ride one, come in, change silks, and go out and get on another horse.

But that might not be what you're asking...  this might be what you mean...  HorseA and HorseB race each other and jockey is on A...  then 3 weeks later the same horses face each other again, can jockey ride B?  that's possible but not likely.  jockeys like to have a mount that they can get every race and trainers like to have the same jockey aboard for every race.  but there can be circumstances where a jockey would switch horses.  Garrett Gomez accepted the mount on Hard Spun for the Belmont before he realized that his filly Rags to Riches was going to be in the race.  Once Rags was entered, Garrett tried to take off of Hard Spun and ride Rags instead, but the Hard Spun group said no.  Therefore, even though Garrett had ridden her in all her previous races, Johnny Velazquez got the mount for the Belmont.  Sometimes trainers let you get back on if it was your mount if something like that happens, but Pletcher runs his stable so that if a new jockey rides the horse in a race, that horse is theirs until they choose to take off of it...  so Garrett lost his filly to Velazquez.

  3. I don't really know about this...
