Question in Making salsa?

I want to make a large batch of salsa but do not want to deal with the canning and sealing part of it..How long will the salsa stay good in my fridge in the glass jars but not sealed?

  1. Assuming your recipe contains a decent quantity of lemon juice, lime juice or vinegar, I'd say no more than a month in unsealed jars.

    I do under stand how the whole canning thing can be a pain.  But, there is a way around most of the pain.  With something like salsa that can be done in a water bath canner (if it's acid enough), why not make one or two jars at a time?  Sanitize one or two jars in the microwave, then dump the water and fill with your salsa.  Put on the lids and seals.  And, boil them for 15 minutes in a saucepan deep enough for the water to cover the jars.  I make pickles, jams, can tomatoes and tomato juice this way.  A jar at a time is so much easier.

  3. I make large batches of salsa and keep them in the fridge in my left over spaghetti sauce jars. If you make sure to add lots of lemon juice it can keep for at least 3 weeks.
