Question on cooking veal?

I bought one of those veal "wheels". It's stuffed with cheese and fresh spinach. How should I cook it and for how long?

it's about an inch thick and 6 inches across.

  1. i would sear it in a skillet to brown both sides,,, then  with onion , and garlic and fresh mushrooms and a little olive oil,,,, then put in the oven with 1/2 cup sherry and  fresh tomatoes cut up,,, then with about a 10 minutes left take out and take the goodness in a pan and add some cream and make a gravy

That sounds delish.  Since it is small (6" long & 1" wide), I would brown the veal wheel/log in a skillet in olive oil (& butter), add some white wine or lemon juice & fresh chopped parsley, cover & cook on low for about 20 minutes.  Check for doneness. The veal is probably pounded very thin, and the stuffing is rolled up inside. Instead of wine, you could add diced tomatoes or tomato sauce, cover & cook through. Don't overcook.
