Question on preparation of Dosa?

while spreading dosa khira(slurry/mixture) on non stick by 'katori' It is getting broken. So please help about quantity for right mixture and technique/procedure.

  1. Try this way but if you can see anyone making it will better.

    First ratio of taking rice and dal soak in water overnight or 7-8 hrs seperately.Add 8-10 fenugreek seeds(methi dana) helps to make soft.

    Parboil rice - 1cup (i.e ponni rice use for dosa and idle)

    Normal cooking rice - 1cup

    White Urad dal (split dal) 1/4 of that same cup taken for rice.

    After soaking first grind dal and make fine paste only add little water as required, then grind rice. Mix dal and rice properly keep in warm place for fermentation for 8-10 hrs. When it is done it will smell sour and taste also a bit sour.

    Mix the batter add salt and see if water is needed add only little water.It should not be too thick nor watery.    

    Now make non stick pan hot on medium flame.Take half onion apply oil on it clean the surface of pan with it.Now put the dosa mix spread it make thin as possible and after few seconds on the sides with spoon put oil and one two drops on dosa allow to cook and try to turn on other side if it turns easly then only do otherwise wait for few seconds.On the other side again just bit of oil wait few seconds and done.

    Serve with chutney and sambar.

    Before doing second dosa little spinkle water on pan alow to evaporate and clean the surface with onion.In starting one two dosas might not turn well it will break dont worry continue doing.

    If your batter ratio is not proper it will not turn good just go for readymade dosa mixture read the instruction and do accordingly.Even istant packets are avl of gits, priya which you can do within 10-15 minutes no fermentaion just open packet add water keep for 10 minutes and start making dosa.

  2. If this is the first time you are making a dosa ever, then maybe the batter consistency is not correct.

    Oil should not be put on the pan so that it forms like tiny puddles. Too much oil on a non stick ruins ' dosas '. Take half an onion put a few drops of oil on it and rub it on the pan, that should suffice.  

    Make sure the pan is not too hot. Sprinkle some water on the pan to see how hot it is. Water should not disappear immediately on contact with the pan.
