Quick! Need an appetizer recipe!?

Having a party tonight for about 50 people....I need one more appetizer---something that will seem kind of impressive but is actually easy and inexpensive.....preferably something that can be eaten standing up. We already have a crudite platter, proscuitto and melon, cheese and crackers, and um....some other stuff. Help!!!! Best option =10 points TODAY!

  1. Oriental Party Pak, its a bunch of asian appetizers like mini Vegetable Spring Rolls and u can eat them anywhere


  2. stuffed mushrooms

    chop the stems add butter, clam juice, worcestershire sauce a little spicy mustard, bread crumbs, white crab meat

    stuff back into caps sprinkle with shredded cheese and bake 25 minutes

    or

    cream cheese, canned chili and shredded cheese

    layer ingredients  microwave 4 minutes til bubbly serve with scoops

    or

    can artichoke hearts, 1/2 cup sour cream, 1/2 cup may 2 cups swiss and chopped sun dried tomatoes

    mix together bake 20-25 minutes til brown & bubbly serve with pita chips or scoops

  3. ARTICHOKE NIBBLES

    2 (6 oz) jars marinated artichoke hearts, cut up

    1 small onion, finely chopped

    1 clove minced garlic

    1/4 c. fine dry bread crumbs

    1/4 tsp. salt

    1/8 tsp. EACH pepper, oregano & tabasco

    1/2 lb. shredded sharp cheddar cheese

    2 TB. minced parsley

    4 eggs, slightly beaten

    Mix all ingredients together well and put into a greased 7x11" baking pan.  Bake at 325 for 30 min, or until set when lightly touched.  Let cool in pan; then cut into 1" squares.  Serve COLD (can also be reheated, or room temp) ......Makes 6 doz. squares

  4. Cheese straws or deviled eggs =) These recipes have detailed directions that make them appear difficult, but they are simple and SO good.

    Cheese Straws (adjusted recipe to feed 50)

      

    6 sheets (3 box) frozen puff pastry (such as Pepperidge Farm), defrosted overnight in the refrigerator

    Flour, for dusting

    3 extra-large egg

    3 tablespoon water

    1 1/2 cups freshly grated Parmesan

    3 cup finely grated Gruyère cheese

    3 teaspoons minced fresh thyme leaves

    2 teaspoons kosher salt

    Freshly ground black pepper

    Preheat the oven to 375 degrees F.

    Roll out each sheet of puff pastry on a lightly floured board until it is 10- by 12-inches. Beat the egg with 1 tablespoon of water and brush the surface of the pastry. Sprinkle each sheet evenly with 1/2 cup the Parmesan, 1/2 cup of the Gruyère, 1⁄2 teaspoon of the thyme, 1⁄2 teaspoon of the salt, and some pepper.

    With the rolling pin, lightly press the flavorings into the puff pastry. Cut each sheet crosswise with a floured knife or pizza wheel into 11 or 12 strips. Twist each strip and lay on baking sheets lined with parchment paper.

    Bake for 10 to 15 minutes, or until lightly browned and puffed. Turn each straw and bake for another 2 minutes. Don't over bake or the cheese will burn. Cool and serve at room temperature.

    Deviled eggs (will feed 50 easily now that I adjusted the recipe)

    26 hard boiled Eggs (large)

    12 tablespoons mayonnaise or salad dressing

    4 teaspoon sugar

    4 teaspoon mustard

    4 teaspoon vinegar

    salt & pepper to taste

    paprika

    For easier peeling use older eggs near the SELL BY date, as fresh eggs are extremely difficult to peel.

    To boil eggs, place eggs in enough cold water to cover completely, bring to a rolling boil over high heat.

    Reduce heat to a lower MEDIUM BOIL and cook an additional 12 minutes.

    Promptly chill eggs in ICE WATER until chilled so yolks stay bright yellow...keep adding ice as necessary....rapid chilling helps prevent the "greenish" ring to appear around the yolk.

    Remove shells from eggs, and halve lengthwise with a knife.

    Carefully remove the yolks, and place in a medium bowl.

    Mash yolks with a fork, and add remaining ingredients.

    Very carefully spoon mixture back into the egg white halves. Garnish with a light sprinkling of paprika

    taco dip is always the first to go at my parties-

    mix one small tub sour cream (about 3/4 cup) and two pkgs softened cream cheese with 1-2 pkgs taco seasoning

    spread onto nice serving dish or cookie sheet

    top with shredded lettuce, chopped tomatoes, shredded cheese, black olives and chopped green onion

    serve with tortilla chips!

  8. How about cold shrimp w/cocktail sauce. You can buy them already cooked and cleaned so that's the easiest thing in the world.  

    Or, you can put tuna salad or egg salad or chicken salad or anything like that on slices of white bread (with the crust cut off), covering the entire surface.  Then roll it into.... well... a roll.  Slice into pinwheels and serve the pinwheels.  

    Or, buy a whole pineapple.  Get a bunch of toothpicks and spear them with anything you'd like -- fruit chunks, grapes, olives, cheese chunks or a combination of many things, which is what I do.  Then stick the toothpicks into the pineapple and keep doing that until everything is all filled up on the outside of the pineapple. People can just take a spear of what they want and it's very neat to eat. When that's all gone, you still have the pineapple that you can slice up and have fresh pineapple.

    Or, deviled eggs.  

    Or, vegetable dip.  Buy one of those cocktail loaves of pumpernickle bread and sour cream and a box of Knorrs vegetable soup.  On the box is the recipe for the dip.  It's quite good.

  9. Easy appetizer I always make and it goes as fast as I put it out is bacon wrapped water chestnuts.

    Get a couple of cans of whole water chestnuts and a lb of center cut bacon.  cut the bacon in half and wrap around chestnuts bake in the oven until the bacon is crispy.  

    Also try buffalo chicken dip.  Get a store bought rotissire chicken take all the meat off.   2 pkgs of cream cheese softened, 1 jar of marie callenders blue cheese dressing, and a 1/4 cup or more to taste of Franks Red hot and mix all together.  Put in a baking dish and cook until bubbly.  Serve with baby carrots, celery and nacho chips.  Very quick and easy

    It is just shaved deli meat and cheese triangles. You dont have to put lettuce on them, ours did not have it. t. The ones that we had catered just had real butter on them and they had mayo and mustard packets on ice on the side.

  12. Veggie platters are always a good idea. You can buy the celery, carrots, cauliflower, broccoli, and such and cut them up yourself. Add some kind of dip in the middle.

  13. You can take a block of cream cheese, cover it with salad shrimp, then pour a bottle of cocktail sauce over it and serve with your favorite cracker.  This is my personal favorite!

    1 large avocado, peeled and mashed with 2 tablespoons lemon juice

    1 cup mayonnaise

    1/2 cup sour cream

    1/2 teaspoon Worcestershire sauce

    1/3 cup chopped onion

    2 cloves garlic, minced

    1 teaspoon salt

    Dash cayenne pepper

    serve with corn chips
