Quick & Simple corn soup recipe......?

ok.. does anyone has a simple corn soup recipe, without the use of chicken and milk??

  1. Milk really does make a great creamy corn soup or I guess more of a corn chowder.

    But you can do it without milk and make a brothy soup instead.

    I would cook up about 1/2 small onion choped small, 1 small potato peeled and chopped small and 1 or 2 cloves garlic choped small in some butter or olive oil, just enough to saute the veggies.

    Add in 1/2 small carrot shredded and about 1/2 stalk celery chopped small. Then add chicken broth or veggie broth and corn-say 2-3 cups frozen or canned. Bring to boil then reduce heat and simmer for about 10-15 min.

    I season all my soups with seasoned salt, celery salt, granulated garlic, onion powder, and pepper. I also sometimes add parsley, chopped dried chives, etc.... what ever flavor you like.
