Quick and easy vegetarian meals?

Im a vegetarian whos hungry for dinner right now but I cant really figure out what to eat. All I really have are what the average american home has and Im tired of pasta, any ideas?

  1. If you have soymilk or milk and fruit, make a fruity shake or smoothie ...

    Bread, make some sandwiches.  Mayo corn sandwiches, Seaweed + Cucumber Sandwiches, Seaweed Bread Roll ...

    Pita bread with falafel, avocados, & hummus.

    Vegan chili made with black beans, kidney beans, corn, green beans, chili sauce, taco seasoning, tomatoes, green peppers & onions.

    Baked/fried/BBQ tofu, seiten, TVP, or tempeh.

    Cook and fry a large portobello mushroom and make a burger.

    Stir fry and season rice/couscous/quiona, beans, and vegetables.

    Bean, rice, & veg cheese burrito, taco, or quesadilla.

    Sandwiches (like tempeh lettuce & tomato, tofurky cheezsteak, roasted vegetable etc).

    Breaed or stuffed mushrooms

    Lettuce wrap

    Fried, baked, or stuffed veggies.

    Stir fry with vegetables and tofu, tvp, tempeh or seitan

  5. i love making brown rice with vegetable stock (or just water if you have it) and then dicing up any veggies i have in the fridge, i do a light saute on things like zuchini, tomato, onion, parsley, garlic, peppers and white beans-drained-) and then tossing it together. If i have any sauces laying around sometimes i do a light coat with them (tomato sauce, or curry, or italian dressing -but that one i chill in the fridge for an hour) or add faux cheese chunks.

  6. Lentils or any type of bean, rice or quinoa, and steamed veggies topped with soy sauce. It is delicious!

  7. broccoli rigatoni.,garlic....olive oil..........romano cheese.....

    boil the rigatonio,.,add the broccoli whem about done....

    in a pan  add oil and garlic.sliced.....cook for a minute.............dump the broc and rig in the pan.toss....

    plate and add grated romano...........

    and eat
