Quick simple meals for college student?

Ok, well I am going to college in a few weeks. I have a meal plan, but I opted for the plan that leaves me on my own for 2-3 meals a week. I am going to a college with several large dining halls, but lets face it, dining hall food is dining hall food. My problem is that I need easy quick meals I can make, and I only have a small mini-fridge I have to share with a room mate. I also have a microwave.

The thing Is, I can only eat so much chefboyaree and easy mac. That stuff puts on weight.

The only thing I have so far is my honey mustard chicken salad. Bagged lettuce, honey mustard dressing and those purdue pre-made breaded chicken cutlets. Slice up one of them, heat it up real quick, throw it over lettuce and some honey mustard. I can do this with one bowl, and its fairly healthy. Lettuce I dont even count, the chicken is like 7 grams of fat and the dressing is like 4-5. Great for a light dinner or throw on a second piece of chicken. say about 3 healthy meals for less than 10$

Does anybody have any other ideas like this? Like simple stuff that isnt bad with fat/calories and isnt too expensive. Mostly just dinner ideas.

So any thoughts? I plan on not gaining the freshman 15, in fact im d**n determined not to.

  1. Buy the Tyson ready made chicken strips, heat them in the microwave and add them to tortillas for a quick fajita...simply heat up some peppers/onions and add your favorite toppings (sour cream, cheese, salse etc).

    Make nachos-use tortilla chips and put refried beans on top with cheese (chicken strips if desired), melt in microwave and top with your favorite toppings.

    Did you know that Hamburger Helper makes a microwavable meal now?  They look better to me than Easy Mac and Chef Boyardee.

    You can also get chili in a can and spice it up the way you like it plus add cheese to the top, heat a hotdog in the microwave and make a chili dog.

    It might also be a good idea for you to invest in a George Forman grill that you could use to make hamburgers, paninis, grilled cheese sandwiches, etc.  You can even grill chicken and other meats in them...or buy an electric skillet that you can cook in.

  3. i like the idea of the chipped drumstick from a poster above me, but i want to comment : DO NOT wrap the end of the chicken in foil.. you will blow up your microwave!!!

    also, think about getting a little george forman indoor grill.. then, you can cook almost anything on it... right in your dorm room.. and there only like, $30

  4. You can get chicken b*****s pre cooked and frozen, then you can heat them up.  And some steam vegis (yes, in the microwave) - you can buy steam bags from ziploc now and just put some fresh or frozen vegis in them - takes like 5 minutes max.

    Also if you are living in the dorm, there should be a community kitchen where you can use an oven and stove - and most people won't be using it, so you should have plenty of free time on it.

  8. A simple recipe I just learned recently was get a couple of drumsticks, one egg and get some chips put in a plastic bag and crush it up chuck the drumstick in it after it gets dipped in the egg.

    Then microwave it for 10 mins

    Wrap the end bit with foil to prevent drying and when cooking it put the chicken drumsticks with the meat bit facing outward on the plate. If more than 1 drumstick then place them in a circle evenly spaced with the foil end in the centre and meat near egde of plate.

    Different chips give different flavouring.
