  1. 75°15' + 83°32' = 158°47'

    47°23' - 73°48' = -(73°48' - 47°23') = -26°25'

    55°30' + 12°44' - 8°15' = (55°30' + 12°44') - 8°15'  = 67°74' - 8°15' = 59°59'

Technically, I should have converted 67°74' to 68°14', but I could see that I was just going to have to "borrow" to do the subtraction.

You need to consider cases like

    12°45' + 37°31' = 49°76' = 50°16'

    and

    86°23' - 18°52' = 85°83' - 18°52' = 67°31'

Bear in mind that, for example, 67°31' means the same thing as (67 and 31/60) degrees, so there's an analog to "carrying" in addition and "borrowing" in subtraction.
