Quick vegan food?

i've been a practicing vegetarian for a couple years now, and i have decided to finally make the switch to vegan. i work two jobs and go to school so i am rarely home so i am looking for some quick meals i can do at home besides the usual frozen vegetarian options and simple salads. vegans, and advice?

also a note, i don't eat any artificial or chemical sweetners like high fructose corn syrup, apartame, sucralose, or any enriched flours or refined sugars. again, making it difficult. :]

any advice would be much appreciated!

  1. Rice and beans

    Pasta with marinara sauce

    Lentil soup, or any other canned, organic, vegan soup  (you can also make a pot of soup over the weekend and eat it during the week)


  2. I know just how you feel!

    The absolute easiest meal to make that is completely vegan is this:

    Couscous with Beans and Greens

    Couscous takes 5 minutes. I use whole wheat couscous, 2 parts water to 1 part couscous. Boil the water, add the couscous, and then lower to a simmer until the water is absorbed. Fluff and serve. (If you have a little extra time, you could make quinoa, which takes about 20 minutes. There are also great pastas that are quick and made with lots of different grains)

    Beans. You can use canned, or fresh, any kind you like. Canned probably fits your lifestyle better. I add a clove of garlic, crushed, and half an onion per 15 oz. can to the beans and cook over medium heat until warmed and fragrant.

    Greens. You can use ANY and ALL greens or vegetables. Try a few different types at once to make it healthier. Sautee garlic in olive oil for a minute and then add your vegetables and a little salt. Cook until greens are wilted or vegetables are cooked thoroughly.

    That's it. Half the plate with veggies, a quarter beans and a quarter grains. Have fruit for dessert and you have a completely balanced vegan meal that is totally delicious in under 15 minutes. The only pain is that you have 3 pots to clean. :)

  3. mmm. get a food processor and start making ur own dips and spread. sooo good . u can use avocado, tomato, sun dried tomato. just toss things in there and make something up ! i do it all the time and dip some organic tortilla chips in there or spread it on some pita bread. hope i could be of some help;)

  4. well, I think you should work on trying your best. if sometime syou have har dtime, thats okay., just take one day at a time.

    keep simple vegan foods - p&b sandwiches, dried nuts, fruit, - at hand so if you get super hungry you always have something.

Tofu, rice, beans, lentils, chickpeas, hummus, pita bread, nuts, seeds, Clif Builders bars, soy milk, almond milk, oatmeal, raisins, fruits, veggies, all natural juice, Nature's Path granola, cereal, fruit leather and nut butters- that is pretty much what I eat. I do have some frozen entrees every once in awhile too. I you cook rice and beans ahead of time they are a good think to take in Tupperware to eat on the go or store in a purse until lunch or dinner time.
