Quinoa and backpacking?

Planning a day trip (one meal only) into the wilderness with a group of 6 this weekend. I (maybe stupidly) offered to provide the meal and pack it in in my overnight pack, so I have plenty of room and all the weight can be food, since I will not be taking a tent or sleeping bag.

Any good ideas or recipes for quinoa? I would prefer to cook it before hand, since none of the rest of the meal will need a pot. I am thinking something down the line of energy bars. But quinoa as part of the meal would be fine too. Keep in mind i am the only vegan, so nothing too weird for a bunch of farm kids used to meat and potatoes... thanks!

  1. It's delish with spicey peanut sauce.

    Bring precut veges to roast over the fire.


  2. Make a whole lot of quinoa and then add some beans (I like to use lentils) and veggies and/or potatoes to it. Finally, top it with soy sauce and there you go!
