Well, the most obvious manifestation of loss of innocence is when George kills Lennie. For a quote, when Lennie kills Curley's wife, he gets mad. "He shook her then and was angry with her. 'Don't you go yelling,' he said, and he shook her; and her body flopped like a fish." (pg 91) Before that we never really see Lennie get mad.
