  1. Apart from high heat, as said above, putting salt in before water can do this (strange, but true).  I wouldn't worry.


  2. This usually indicates high heat. I learned quickly that stainless cookware can cook at lower temps. The only reason to heat a pan at high heat is when cooking meat. Heat the pan on high, add the meat and then turn the temp down. This will prevent sticking.

  3. More than likely it's fine.  Stainless steel and copper cookware are notorious for discoloration.  If you've washed it very well, and the discoloration is still there and you're concerned about it, contact the manufacturer.

    Personally, I wouldn't be concerned with it.
