Ramadan In Morocco........?

My husband is Moroccan, ramadan is soon and I want to be able to make him some great food that reminds him of home. Any ideas or websites would be great!

    Recipe :

    Ingredients

    1 lb flour

    8 ounces butter

    1/2 lb sesame seed, plus additional toasted seeds for sprinkling

    1/2 teaspoon dry yeast, dissolved in

    2 tablespoons water

    1 teaspoon turmeric

    1 teaspoon ground cinnamon

    1 cup vegetable oil

    vegetable oil (for frying)

    25 ounces honey

    Directions:

    1In a food processor process all the ingredients, except the honey, into a paste.

    2Take a walnut-sized piece of paste and roll it out very thin. Using a metal cut-out typically found in Morocco, with different designs, a small shaped cookie cutter, pie crust/ravioli wheel or knife and cut out cookies and let them rise for 15 minutes. If not using a cookie cutter which I don't, simply cut strips and twist them into a spiral or figure 8. I do the figure 8 making sure it is secure by slightly pinching in 2-3 places.

    3Deep-fry the cookies in a skillet or fryer in the remaining oil in batches over low heat just to brown.

    43-Soak the cookies in the honey for 15 minutes. Remove and sprinkle with toasted sesame seeds. Let sit until the honey sets a bit.

    5Store in a plastic bag or container.

    6One person emailed me when this was posted on my website stating that her cookies fell apart in frying. This should not happen though if it does, 5g of gum arabic may be added to the recipe at processing stage or re-processed briefly to add.

    But I also like Zoolak??? Think that's how you spell it...it can be made many different ways!

    Recipe-

    Egg plant -diced aand left in the fridge in oil for a couple of hours

    Bell peppers- diced also

    First in a pan lightly cook the egg plant with garlic and salt and pepper.

    Then do the same with the peppers.

    Then take both out of pan and in the same pan lightly cook some tomato sauce with a little salt pepper and paprika dolce. Add all together and you get lovely vegetables!!! Delicious I loved this in Morocco.

    We also make Lamb with prugnes....which I love!

    And one of my favourites is also Birk? Think is more Tunisian but my husband and i love it!

    Recipe-Birk

    A pack of spring roll pastry (look in the freezer department of your supermarket, or try local Arab food shops)

    A medium sized potato, peeled and chopped into small chunks

    A small can of tuna, drained

    4 Medium eggs

    About 2 dessert spoons of chopped fresh parsley

    A dash of salt and pepper

    Oil for shallow frying

    Lemons to serve

    Boil potatoes and mash up as usual!

    fry onion with garlic salt and pepper also add parsley (fresh) then when the onion is lightly brown add tuna.

    Mash potatoes and tuna and onion together.

    When mixed place a small amount in the middle of the pastry crack an egg open over it close quickly and drop in hot oil!

    I haven't explained very well ....but this tastes excellent!

    And really easy to make.

  5. Shebakkia is a popular tea time/ramadan treat. Good choice as it will likely remind him of his childhood...children love it! its basically deep fried pastry twists covered in sesame seeds & honey....I attempted to make it for the in-laws last years eid (ul-fitr) party all family members bring food, but as I was running late ended up bringing a salad. lol

    If you have a few hours to spare here's a home recipe.

    Ingredients.

    5 pounds of flour.

    4 pounds of butter.

    2 pounds of sesame seeds. (I suggest you lightly toast them)

    1 table spoon of cinnamon.

    12 pounds of honey.

    Sunflower oil.

    Put all the ingredients (not the honey) in a food processor & make a paste.

    Get small peices & roll them out very thin, Put them on an oven tray in swirly designs or better yet buy the special metal cut out tray's found in Morocco and leave them in there for 18 minutes to rise. Then deep fry them in sunflower oil until they go a golden brown..take them out and soak them in the honey for 12 minutes & lastly sprinkle the sesame seeds and your done!

    For the main meal make a salad, chicken in sauce with rice or cous cous & some humus (chick pea paste) & pita bread as a side dish.
