Re-freeze frozen meat once it's been cooked?

I know you are not supposed to freeze meat again, once it has been thawed, but if you cook it? Can you then freeze it again? Knowledgeable answers only please. Thanks in advance all you experts!

  1. Of course.  Just make sure that you cool it down in the fridge before you freeeze it to avoid freezing any bacterial organisms which breed in room temperature food.  AS I stated above make sure to use the fridge so it cools off evenly.  Do not put directly in freezer as the others are saying.


  2. It's okay to re-freeze meat after it's cook, but be sure to let it cool down a little before you cling-wrap & put it in the freezer. That's how we prepare our japanese "charshu" (sweetmeat) in large quantities in the restaurant. When you need to use, put it in the chiller for 1 or 1+1/2 day to let it thaw slowly. I prefer to thaw for 1 day & it's still a bit hard, then I can slice them really thin.

  3. I do it all the time and I'm still alive!  You're not supposed to refreeze meat because it can start growing bacteria when it's thawed, and then these can continue to grow slowly when frozen.  When you cook it, you kill all of the bacteria.  As long as you put cooked meat in the fridge or freezer soon after it is cooked, you'll be fine.  It's also okay to put it in the fridge for a day or two and then put it in the freezer.  Just make sure you freeze cooked meat separate from uncooked meat.
