  3. Appetizer Chicken Kabobs --

    INGREDIENTS

    3/4 cup soy sauce

    1/4 cup sugar

    1 tablespoon vegetable oil

    1/4 teaspoon garlic powder

    1/2 teaspoon ground ginger

    2 skinless, boneless chicken breast halves - cut into 1 inch pieces

    6 green onions, cut into 1-inch pieces

    8 ounces fresh mushrooms, stems removed

    DIRECTIONS

    In a mixing bowl, combine first five ingredients. Stir in chicken and onion; allow to marinate for 30 minutes. Soak wooden skewers in water. On each skewer, thread a piece of chicken, onion, mushroom and another chicken piece. Place on a broiler rack. Broil 5 in. from the heat, turning and basting with marinade after 3 minutes. Continue broiling for another 3 minutes or until chicken is done. Serve immediately.

    Summer Lamb Kabobs --

    INGREDIENTS

    5 pounds boneless lamb shoulder, cut into 1 inch pieces

    6 tablespoons Dijon mustard

    4 tablespoons white wine vinegar

    4 tablespoons olive oil

    1/2 teaspoon salt

    1/2 teaspoon black pepper

    1/2 teaspoon chopped fresh rosemary

    1/2 teaspoon crumbled dried sage

    4 cloves garlic, chopped

    4 green bell peppers, cut into large chunks

    1 (10 ounce) package whole fresh mushrooms

    1 (16 ounce) can pineapple chunks, drained with juice reserved

    1 pint cherry tomatoes

    4 onions, quartered

    1 (10 ounce) jar maraschino cherries, drained and juice reserved

    1/3 cup melted butter or margarine

    DIRECTIONS

    Place lamb in a large bowl.

    In a separate bowl, stir together mustard, vinegar, olive oil, salt, pepper, rosemary, sage, and garlic. Pour over lamb, and mix to coat meat. Cover, and refrigerate overnight.

    Preheat outdoor grill for direct heat.

    Add marinated lamb, fruit, and vegetables to stainless steel or bamboo skewers. Reserve some of the juice from pineapple chunks and cherries.

    In a small bowl, stir together melted butter and splashes of juice from the pineapples and cherries to create a basting sauce.

    Place skewers on preheated grill, and cook about 12 minutes, turning and brushing with butter sauce.

    Stuffed Filet Mignon Bites --

    INGREDIENTS

    4 (6 ounce) filet mignon steaks

    1 (16 ounce) bottle Italian dressing

    1 (8 ounce) package cream cheese

    1/4 cup minced jalapeno pepper

    20 slices thinly sliced bacon

    DIRECTIONS

    Slice the steaks into 1/2-inch wide strips. Pound the strips to about half their original thickness. Place the steak in a bowl; pour the Italian dressing over the meat; allow to marinate at least 2 hours.

    Mix together the cream cheese and jalapeno pepper in a bowl; set aside. Remove the strips from the marinade and lay out on a flat surface. Spread about 1 teaspoon of the cream cheese mixture on each strip.

    Preheat an outdoor grill for high heat and lightly oil grate.

    Remove the strips from the marinade and lay on a flat surface. Spread about 1 teaspoon of the cream cheese mixture on each strip. Fold the meat around the cream cheese mixture to form a ball. Wrap each ball with a slice of bacon. Secure bacon with water-soaked toothpicks or metal skewers.

    INGREDIENTS

    1/4 cup olive or vegetable oil

    1/4 cup chili sauce

    2 garlic cloves, minced

    8 (1-ounce) sea scallops

    Hot cooked rice

    DIRECTIONS

    In a large resealable plastic bag or shallow glass container, combine the first five ingredients. Add shrimp and scallops. seal or cover and turn to coat. Refrigerate for at least 1 hour.

    Discard marinade. Place shrimp and scallops on flour metal or soaked bamboo skewers. Grill, covered, over medium heat for 5 minutes on each side or until shrimp turn pink. Serve over rice.

    Chicken and Bacon Shish Kabobs --

    INGREDIENTS

    1/4 cup soy sauce

    1/4 cup cider vinegar

    2 tablespoons honey

    2 tablespoons canola oil

    10 large mushrooms, cut in half

    2 green onions, minced

    3 skinless, boneless chicken breast halves - cut into chunks

    1/2 pound sliced thick cut bacon, cut in half

    1 (8 ounce) can pineapple chunks, drained

    DIRECTIONS

    In a large bowl, mix the soy sauce, cider vinegar, honey, canola oil, and green onions. Place the mushrooms and chicken into the mixture, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.

    Preheat grill for high heat.

    Wrap the chicken chunks with bacon, and thread onto skewers so that the bacon is secured. Alternate with mushroom halves and pineapple chunks.

    Lightly oil the grill grate. Arrange skewers on the prepared grill. Cook 15 to 20 minutes, brushing occasionally with remaining soy sauce mixture, until bacon is crisp and chicken juices run clear.

    Shish taouk (chicken kebabs)

        * 2 lbs cubed chicken breast

        * 3 tablespoons lemon juice

        * 1 tablespoon olive oil

        * 2 cloves garlic, finely chopped

        * 1/4 teaspoon cumin

        * 1/2 teaspoon pepper

        * 1/8 teaspoon cayenne

        * 1 small onion diced into 1 inch by 1 inch pieces

        * 12 small mushrooms

        * red bell pepper diced into 1 inch by 1 inch pieces

    In a medium bowl, combine all ingredients except vegetables. Allow chicken to marinate for 2-24 hours, covered in the refrigerator.

    Place chicken, onion, pepper, and mushrooms on the skewers but alternating them in order. Grill for 15 minutes or until done.

    Remember to turn skewers during cooking.

    Serve shish taouk with a bed of rice, bread and a salad.

  5. Beef Kebabs

    INGREDIENTS:

        * 1 pound beef top sirloin, cut into 1 inch cubes

        * 1 green pepper, cut into 1 inch squares

        * 1 medium onion, cut into 1 inch pieces

        * 1 can pineapple chunks

        * 1/2 cup vegetable oil

        * 1/3 cup sherry

        * 1/3 cup soy sauce

        * 1/4 cup brown sugar

        * 1 cloves garlic, minced

        * 1/2 teaspoon minced ginger

    PREPARATION:

    Combine sherry, soy sauce, brown sugar, garlic and ginger. Mix well. Place in a baking dish and add sirloin. Turn to coat well. Let sit for 1 hour. Preheat grill. Tread sirloin strips, peppers, and pineapple onto skewers.

    Grill over high heat until the meat is done, about 8 minutes Turning occasionally.

  7. Kabobs are cute and can be fun, but they are a lot of work. Much harder than cooking the meat and veggies.

    Good kabob gear helps a lot.

    If you decide to make them, you can grill them (best) or make in the oven. You can even do raw kabobs with fruit and dip.

    If cooking, space the foods out, so they cook even. Don't turn too soon, or things start to slide. If you have double kabob skewers or a turn basket, then that's not such a problem.

  8. Marinate some pieces of meat, chicken, beef, veggies, onions, mushrooms, zucchini, squash, etc.

    Make sure to put the meat and the vegetables on SEPARATE skewers because the meat and the vegetables cook at different temperatures. Cook on the grill.
