  3. You can probably make really good shortcakes with what you have on hand.  Make a caramel glaze out of the brown sugar and butter and add vanilla and some powdered sugar to add some richness.

  4. You can make delicious shortbread cookies out of this. The brown sugar gives it a caramel-y flavor, and the butter keeps it crisp.

    Shortbread

    1 cup flour

    1 stick (1/2 cup) butter

    1/3 cup brown sugar

Preheat oven to 350 degrees. Mix all ingredients together until butter is fully incorporated (it will be crumbly). Press into a 9" square pan and bake for 18 to 20 minutes, until it just starts to turn golden around the edges. Cool slightly then cut and transfer to a rack to finish cooling. This is one cookie that is best when it is completely cool - the texture and flavor are much better.

  5. Brown Sugar Drop Cookies

    2/3 cup shortening

    1 cup packed brown sugar

    2 eggs

    1 teaspoon baking soda

    1 1/2 tablespoons hot water

    1 1/2 cups flour

    1/2 teaspoon salt

    1 tablespoon ground cinnamon

    Optional: add raisins and pecans

    Preheat oven to 350 degrees.

Cream together shortening and brown sugar. Add eggs and mix well.

Dissolve baking soda in hot water. Stir into mixture.

Add flour, salt and cinnamon. Mix well.

Drop by spoonful onto cookie sheet. Bake 10 - 12 minutes.
