Recipe for Clear Soup?

I am looking for the recipe to make a good clear soup, the kind of soup that i usually served at Japanese resturaunts, of course it is clear, but they usually put mushrooms and green onions in it.

  2. Save your time and trouble.  Use Swansons clear chicken broth for your base!  Then add your ingredients.

  3. This is the exact recipe from a Benihana restaurant.  From your description this is the soup you are looking for.  I would have to agree with everybody else's answers in so far as the "save yourself the time", but if you really want to make it, here it is!  

    Also, if you go to the site you can change the measurement to show US instead of Metric.  Good Luck!!!

    "Benihana Restaurant Onion Soup"

    Ingredients

    STOCK

    1 chicken carcass

    1 beef bone

    1 onion (diced finely)

    1/4 stalk celery

    2 quarts water (= 2 liters)

    1/2 carrot (sliced)

    1/4 garlic clove (smashed)

    SOUP

    1 medium onion (thinly sliced)

    1 kg mushroom (thinly sliced)

    2 tablespoons sesame oil or vegetable oil

    1/4 cup chopped shallot

    Directions

    Boil all stock ingredients together for 45min. Strain through cheesecloth or napkin. use only the broth. (you can simmer stock for 4-5 hrs then strain). Slowly cook the onion in oil until it is slightly brown and crisp. Drain and pat with paper towel. Add onions and mushrooms and shallots to broth in bowls

        * egg shells and whites

        * cheesecloth

    After you have boiled your meat and assorted vegetables and herbs, strain the liquids through a steel mesh strainer, and chill.

    Remove the solid layer of fat from the surface.

    Measure the remaining liquid and for every cup of stock, use one egg shell and one egg white.

    Beat the egg whites slightly and add both the broken shell and whites to the broth.

    Boil for 5 minutes. Remove from heat and let stand for 15 minutes.

    Strain through a cheesecloth. Store in a covered container in a cool place until ready for use.
