Recipe for Dim Sum --- Rice Noodle and Shrimp?

We just went into China Town and had a fabulous Dim Sum dish they called "Shrimp and Rice Noodle". I also heard it called "Shrimp Fun" (spelling?). It was a flat noodle folded around shrimp and then a sweet soy sauce was drizzled over it all. It was awesome...does anyone have the recipe for this???

  1. That is called long fun.  It will be a task for you to make.   First you must get rice flour and a steamer

    fine cheese cloth.  Put the cheese cloth over the steamer then slowly pour  your mixture of rice flour on the cheese cloth.  Your shrimp should be cleaned and steamed.  In 3 to 31/2 min your long fun should be ready to roll with the shrimp.

I buy pre-made rice noodle sheets from Chinese noodle or grocery, then go and buy a bag of small raw shrimip, defrost them and stir fry them, fold them over in the rice noodles, steam them on a pyrex pie plate with a bit of stock, sesame oil and seasoning and then drizzle them with soya sauce mixed with chopped ginger and garlic a dash of sugar and sesame oil, mix it warm in the microwave and serve on the side.

    The last lady is right to make them at home is quite a chore, and if your not careful you can scald your self with the steam, buy them pre-made they are easy to handle and safer in the long run, some stores have the made with the shrimp or veg to just take home a heat and serve with the sauce I recommended.

  5. Try this recipe, hope this help...

    ~Dim Sum : Steam Rice Noodle Roll W/ Shrimps~

    Materials:

    Shrimps without shell    200 g

    Rice Noodle Sheet      4 pieces

    Spring Onion     2 stalks

    Chinese Parsley     some

    Seasoning    1:

    Egg White     1 pc

    Salt / sugar / pepper     some

    Cornflour    1/3 tbsp        

    Seasoning    2:

    Oyster Sauce     5 tbsp

    Chicken Stock   100 ml

    Sugar / Cornflour   1 tbsp

    Pepper / Sesame Oil     some

    Steps:

    1)   Wash and wipe dry of shrimp, marinate with seasoning

    2)   Heat the wok, cook seasoning (2) until boil, keep heat          

    3)   Cut the rice noodle sheet into 10x20 cm in size

    4)   Put marinated shrimp on surface of noodle sheet, roll into long strip

    5)   Steam the rice noodle roll for 8-10 minutes, sprinkle parsley

    6)   Add cooked seasoning (2) of step 2, serve

    Enjoy!! :)
