Recipe for Kugel and/or latka's?

I'm not sure how to spell the second one, but it's a jewish potato pancake that is delicious and my friend made it for me a couple weeks ago, and I'd like to know the recipe, how to make it, and what I need. Kugel is the second thing I want to know how to make, it's so incredible I'd eat it like fast food. How to make that, what ingredients, and anything else will help. Thanks a lot!

  1. Grandma's Kugel

    Ingredients:

    1 lb. noodles

    1 #2 can of crushed pineapple

    4 eggs

    1 cup of apples (optional)

    1 cup sugar

    raisins

    1/4 lb. margarine

    salt to taste

    16 oz. sour cream

    cinnamon

    1/4 tsp. vanilla extract



    Method:

    Cook noodles. Beat the eggs. Add sugar, margarine, sour cream, and vanilla. After well mixed, add the fruit. Mix the noodles with the liquid, making sure that the noodles are all well covered in the sauce. Pour into a greased 9x13 pan. Bake at 350 degrees for one hour or until brown.

    TIME: Prep/Total Time: 30 min.

    Ingredients:

    2 cups shredded peeled potatoes (about 2 medium)

    1/2 cup finely chopped onion

    2 green onions, chopped

    1 egg, lightly beaten

    Salt and pepper to taste

    Oil for frying

    Directions:

    Place potatoes in a clean linen towel; squeeze, reserving liquid in a measuring cup. Set aside until potato starch settles. Drain off top liquid; set potato starch aside.

        In a bowl, combine the potatoes, onion, egg, salt, pepper and reserved potato starch. Heat 2 tablespoons oil in a large skillet. Shape potato mixture by 2 tablespoonfuls into patties; place in hot oil, pressing lightly to flatten.

        Fry until golden brown, about 1-1/2 minutes on each side. Drain on paper towels. Serve immediately or place in a warm oven until ready to serve. Yield: 1-1/2 dozen.

    For Latkes:

    2 cups peeled and shredded potatoes

    1 tablespoon grated onion

    3 eggs, beaten

    2 tablespoons all-purpose flour

    1 1/2 teaspoons salt

    1/2 cup peanut oil

    Place the potatoes in a cheesecloth and wring, extracting as much moisture as possible.

    In a medium bowl stir the potatoes, onion, eggs, flour and salt together.

    In a large heavy-bottomed skillet over medium-high heat, heat the oil until hot. Place large spoonfuls of the potato mixture into the hot oil, pressing down on them to form 1/4 to 1/2 inch thick patties. Brown on one side, turn and brown on the other. Let drain on paper towels. Serve hot!


  3. try using grated sweet potatoes instead of potatoes, use a simple creme of 3/4 sour cream and 1/4 any jam/marmalade.... these are some really intensive recipes already posted.  its not that complicated, but alot of this specific food item is steeped in religion and culture for generations.
