Recipe for Saag. The Indian Spinach Dish?

Whenever I go to an Indian resturant I always get this and absolutely LOVE it! I want to try and cook it. I was wondering is anyone might have the recipe and would like to share :) I found some online already, but it's not what I want. it's all Saag Aloo... and stuff. I just want Saag alone. That's it. Just the spinach in the cream sauce. Also what is the ingredient that makes the Saag spicey. Just so I know what to hold back on or put more in... depending what I want that day. :) Thanks in advance!!

  2. Saag Aloo

    2 large potatoes

    2 Tbsp vegetable oil

    2 cardamon cloves

    6 black peppercorns

    1 clove garlic

    1 medium onion

    1/2 tsp chili powder

    1 inch fresh ginger

    1 tsp cumin powder

    1 tsp ground coriander

    2 Tbsp water

    16oz spinach

    Cut the potatoes and soak in a bowl of water. Heat oil in pan, then add in cardamom seeds and crushed peppercorns. Saute for 3 minutes. Chop ginger into slivers, onion into strips and crush the garlic. Add in garlic, onion, chili and ginger, and cook another 4 minutes.

    Stir in curry and coriander. Add the potato pieces at this point, blending them thoroughly. Add in 2 Tbsp of the water plus the spinach and simmer 20 minutes.

  3. SAAG ALU (SPINACH AND POTATOES)  

    2 1/2 lb. chopped frozen spinach

    2 chopped onions

    1 chopped tomato

    1 tbsp. salt

    1 tbsp. chili powder

    1 tbsp. cumin powder

    1 tbsp. coriander powder

    1 tbsp. turmeric powder

    3 tbsp. tomato paste

    1/2 c. vegetable oil

    3 c. water

    1 tbsp. fresh chopped garlic

    1 tbsp. fresh chopped ginger

    2 potatoes, peeled and diced

    2 tbsp. unsalted butter

    In a large pot, mix all ingredients, except potato and butter. Cook at medium heat for three hours with lid on. Stir occasionally. After mixture has thickened, put in blender to get a smooth sauce. Put this spinach mix into large frying pan with the diced potatoes and cook until done, about 7 to 10 minutes. Transfer to large bowl, top with the unsalted butter and serve.

  4. Saag Aloo

    Ingredients

    20 ounces spinach

    1 1/2 cups water

    4 ounces onions , peeled, cut in half lengthwise and very thinly sliced

    5 tablespoons vegetable oil

    1 pinch ground asafetida powder (optional)

    2 teaspoons whole black mustard seeds

    2 garlic cloves , peeled and minced

    1 lb potatoes , peeled and cut into 3/4 - 1 inch chunks (I parboil them first)

    1/4 teaspoon cayenne pepper

    1 teaspoon salt

    Directions

    1. Bring water to boil in saucepan.

    2. Add spinach, cover, and cook until it is just done.

    3. Drain in a colander and rinse under cold water.

    4. Press out most of the liquid and chop coarsely.

    5. Heat oil in heavy saucepan over medium heat.

    6. When hot, add asafoetida followed by mustard seed.

    7. As soon as mustard seed begins to pop, add onion and garlic.

    8. Stir-fry for 2 minutes.

    9. Add spinach, salt and 2 tsp water; bring to boil.

    10. Cover tightly, turn heat to very low and cook gently for 40 minutes or until potato is tender.

    11. Stir occasionally and add liquid to pot if it becomes too dry.

  5. wash blanch the spinach and keep it aside to cool down.

    grind one onion, 2 cloves of garlic, 1 tomato,to a nice paste.

    now in a pan add oil(butter is a good idea-it makes it more creamy)

    now add a tsp of jeera,and the add this onion-garlic paste.

    fry for sometime.

    then add 1/2tsp of chili powder(+ or - as u need it)then add salt,1/4tsp of sugar,and fry till oil separates from the sides.

    now grind the spinach and add it to this and mix well.add some cream and serve hot.u can add aloo or any other veg to this.
