  1. These aren't your normal brownies, but they are soooo very good. However, if you're on a low calorie diet, these aren't for you (the recipe calls for 4 sticks of butter in all!). But give them a try, I'm sure you'll like them...everyone does. And if you're not a marshmallow fan, don't be put off by the fact that the recipe calls for them. I don't usually like them either, but with this they work really well.

    Brownies:

    4 ounces unsweetened chocolate

    1 cup (2 sticks) unsalted butter

    4 large eggs

    2 cups sugar

    1 teaspoon vanilla extract

    1 cup all-purpose flour, sifted

    Frosting:



    4 ounces (4 squares) unsweetened chocolate

    1 cup (2 sticks) butter, softened

    1/2 cup pasteurized egg substitute (recommended: Egg Beaters)

    1 teaspoon vanilla extract

    1 (1-pound) box confectioners' sugar, sifted

    4 cups mini marshmallows

    Preheat oven to 350 degrees F.

    Grease a 13 by 9-inch baking pan.

    Melt the chocolate and butter in a 2-quart bowl in the microwave on high for 3 minutes, stirring every 20 to 30 seconds until the chocolate is completely melted. Add the eggs, sugar, and vanilla and mix well with a spatula. Add the flour and stir to combine. Spread the batter evenly in the prepared pan. Bake for 25 minutes.

    While the brownies are baking, make the frosting. Melt the chocolate and butter in a medium bowl in the microwave on high for 3 minutes stirring every 20 to 30 seconds until the chocolate is completely melted. Add the egg substitute, vanilla, and sugar and stir with a spoon until smooth. Stir in the marshmallows; they will soften but not melt completely. Spread the frosting over the warm brownies. The frosting will set up when the brownies are completely cooled.

    When cool, cut into 1 1/2-inch squares and store in the refrigerator in a plastic container with a snap-on lid.

    Here's a recipe to make  The Frustrated Moms famous brownies!

    Remove teddy bear from oven and preheat oven to 375.

    Melt 1 cup margarine in saucepan.

    Remove teddy bear from oven and tell Jimmy "no, no."

    Add margarine to 2 cups sugar.

    Take shortening can away from Jimmy and clean cupboards.

    Measure 1/3 cup cocoa.

    Take shortening can away from Billy  and bathe cat.

    Apply antiseptic and bandages to scratches sustained while removing shortening from cat's tail.

    Assemble 4 eggs, 2 tsp. vanilla, and 1-1/2 cups sifted flour.

    Take smoldering teddy bear from oven and open all doors and windows for ventilation.

    Take telephone away from Jimmy and assure party on the line the call was a mistake. Call operator and attempt to have direct dialed call removed from bill.

    Measure 1 tsp. salt, 1/2 cup nuts and beat all ingredients well.

    Let cat out of refrigerator.

    Pour mixture into well-greased 9x13 inch pan. Bake 25 minutes.

    Rescue cat and take razor away from Billy.

    Explain to kids that you have no idea if shaved cats will sunburn.

    Throw cat outside while there's still time and he's still able to run away.

    Frosting--Mix the following in saucepan: 1 cup sugar 1 oz unsweetened chocolate 1/4 cup margarine.

    Take the %$$&#&% teddy bear out of the @#$% broiler and throw it away -- far away.

    Answer the door and meekly explain to nice policeman that you didn't know Jimmy had slipped out of the house and was heading for the street.

    Put Jimmy in playpen.

    Add 1/3 cup milk, dash of salt, and boil, stirring constantly for 2 minutes.

    Answer door and apologize to neighbor for Billy having stuck a garden hose in man's front door mail slot. Promise to pay for ruined carpet.

    Tie Billy to clothesline.

    Remove burned brownies from oven.  

  3. Here's a great recipe - minimal number of basic ingredients, just about as easy as a mix and tastes amazing. The recipe has been made by my family for over 50 years.

    Brownies

    2 ozs unsweetened chocolate

    1/4 c butter (1/2 stick)

    1 c sugar (I use a little less because I like them less sweet)

    2 eggs

    1 tsp vanilla

    1/2 c flour

    1/8 tsp salt

    1/2 c chopped walnuts (or pecans) even better if you toast them first

    1/2 c semisweet chocolate -- chunked from a bar

    Preheat oven to 325. Line 8 or 9 inch square pan with wax paper, butter paper. Melt chocolate and butter in medium pan. Add sugar, eggs and vanilla, mix. Stir in flour, nuts, chunked chocolate and salt and pour into prepared pan. Bake about 25 minutes. (I go for slightly underbaked - that way they stay nice and chewy). Cool in pan on rack for 5 minutes, then flip over out of the pan, peel off the wax paper and continue to cool on rack. Eat them quick or cover them up tightly once cool so they stay chewy.

  4. The best recipe I've found is:

    1/2 cup butter

    1 cup white sugar

    2 eggs

    1 teaspoon vanilla extract

    1/3 cup unsweetened cocoa powder

    1/2 cup all-purpose flour

    1/4 teaspoon salt

    1/4 teaspoon baking powder

      

    3 tablespoons butter, softened

    3 tablespoons unsweetened cocoa powder

    1 tablespoon honey

    1 teaspoon vanilla extract

    1 cup confectioners' sugar

    DIRECTIONS:

    Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.

    In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.

    Bake in preheated oven for 25 to 30 minutes. Do not overcook.

    To Make Frosting: Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar. Frost brownies while they are still warm.
