  1. Chicken Linguini with Roasted Red Pepper, Cherry Tomato and Cream Sauce

    Ingredients;

    2 boneless, skinless chicken breast halves

    2 tablespoons olive oil, divided

    1 teaspoon freshly ground pepper

    1 tablespoon plus 1 teaspoon kosher salt, divided

    2 tablespoons unsalted butter

    2 tablespoons finely chopped onion

    4 sprigs fresh thyme, leaves chopped

    1 tablespoon tomato paste

    1 canned roasted red pepper in oil, rinsed and cut in 1/4 inch squares

    1/3 cup heavy cream

    1 pint cherry tomatoes, quartered

    3/4 pound linguini

    1/4 teaspoon salt

    3/4 cup grated asiago cheese

    1 bunch fresh basil, leaves torn

    Directions:

    Butterfly chicken b*****s and cut into 3/4 inch cubes. In large skillet over medium high heat, place 1 tablespoon of the olive oil. Sprinkle chicken with 1 teaspoon of the kosher salt and pepper; add to pan. Cook until lightly browned, about 10 minutes; remove from pan, cover and set aside. (Do not crowd pan; cook chicken in 2 batches if necessary). While chicken is cooking, place large pot of water over medium high heat; add 1 tablespoon of the salt and bring to a boil. Wipe skillet with paper towel, place over medium high heat and add butter and remaining 1 tablespoon olive oil. Add onion, lower heat and cook about 3 minutes until soft. Stir in thyme, raise heat to medium and add tomato paste; cook 1 minute. Stir in red pepper and cook 2 minutes more. Add cream, bring to slow boil and add tomatoes; cook about 2 minutes until tomatoes are soft; remove from heat and cover. Add pasta to boiling water and cook according to package directions. When pasta is almost done, return chicken to sauce and gently reheat. Reserving 1 cup water, drain pasta and add to sauce. Cook about 1 minute, adding some of reserved pasta water if needed to thin sauce. Remove from heat and add 1 tablespoon basil leaves, salt and 2/3 of asiago cheese; mix well. Remove to serving dish, arranging some of chicken pieces on top. Sprinkle with remaining cheese garnish with basil leaves. Makes 4 servings.
