  1. Eclairs are made with a basic choux pastry dough.  It is very simple and very versatile!

    ½ cup butter

    1 cup water

    ¼ teaspoon salt

    1 cup all-purpose flour

    4 eggs

    In a medium saucepan, melt the butter in the water. Add salt and flour, and stir until a sticky batter is formed. Beat in the eggs, one at a time, until the batter is smooth.

    When the dough is ready, transfer to a pastry bag, fitted with the tip desired, and form whirls of the mixture on a buttered baking sheet.

    Makes enough dough for 8 medium-sized pastries


  2. The recipe you are looking for is for choux pastry. You should be able to find one if you google it!

    It is basically butter, flour, eggs.

    You also make profiteroles from the same pastry.

    When you make it weigh everything very carefully and follow directions to the letter. Choux pastry is an exacting recipe.

    The shape of the eclairs are piped onto a tray using a piping bag to get that long even look.

    Lot quicker than the likes of making puff pastry.
