I'm looking for an english recipe for Sopa de Cuy ("soup of guinea pig).
Does anyone have any good recipes for Sopa de Cuy?
Here's a recipe I found in spanish:

Using google's translator does most of the work, but I can't figure out what "Écheles", and "frÃÂalos" are.
Translated version:

Instructions:

Écheles salt and frÃÂalos for about five minutes in hot oil.
Drain fat and echela. Boil in water, along with the rice, carrots and potatoes, until they are completely cooked.
Season with oregano and salt.
Make dressing with onion and chili marinade, and Accompany with potatoes and eggs.
