  1. I just looked at this site for something else and what should be on their front page at the moment, but pickling!!  I didn't look further, just passing it on :  http://www.recipezaar.com/

  2. Mom still make onion and cucumber and carrot pickles. But she didnt boil it. For the amount, lets say red onion cut into 2piece. Cube cut cucumber and sweet carrot. For the liquid, the comparison should be : vinegar : sugar : water = 1tbsp : 1tbsp : a small tea cup. Mix those, pour into the jar (small size skippy peanut butter jar,but u might want to have bigger jar pickles so just add) n put onion inside it. Close the jar. Onion must be soaked in it. If u make them at 9am, u can eat it at dinner.

  3. VIDALIA SWEET ONION PICKLES

    Printed from COOKS.COM

    --------------------------------------...

7 qts. small Vidalia sweet onions

    2 c. pickling lime

    SYRUP:

    2 qts. vinegar

    3 c. sugar

    1 tbsp. salt

    1 1/2 tbsp. turmeric

    2 tbsp. mustard seed

    2 tbsp. celery seed

Leave onion whole or quarter if large. Mix lime in 1 1/2 gallons water. After peeling and preparing onions, soak 24 hours in lime water in large enamel container. Stir onions occasionally. After 24 hours, wash several times in cold water to remove lime and then chill. Make syrup. Mix all ingredients together and bring to a boil; drop onions into syrup and bring to boil again. Cook 10 minutes. Seal in jars while hot. Serve chilled. Yield: about 12 pints.

  4. 4 c. water

    2 1/2 c. sugar

    4 tbsp. canning salt

    Fresh dill

Heat brine until sugar is dissolved, 8-10 minutes. Put small pieces dill in jar and a small piece of onion. Pack in small cucumbers and another piece of dill on top. Cover with hot brine; put lids on jars. Put in hot water bath 20 minutes. Shut off heat; leave until cool.
