Recipe ideas for tons of veg i have in my garden please

i have spuds, onion, tomatoes, sweetcorn, cabbage radish runner beans, beetroot, courgettes...what different meals can i make with all of these ?? thanks x

  2. For the cabbage, spuds, and onions, look up Irish recipes! They use a lot of those. "Colecannon" comes to mind.

  3. You can roast most of those and they'll be great. Heck, all of them would go great in salad, too. Do you have a grill? Shish kebabs are always nice.  Other than the beet, radish, and cabbage, you could put all of them into soup (beet, radish, and cabbage CAN go into soup, but can be overwhelming). If you're feeling creative, you can mix everything but the cabbage and roll the mixture into the cabbage leaves. Stuffed cabbage! And don't forget the power of freezing and canning. (Sauerkraut, tomato sauce, succotash, pickled beets, etc.)

  5. You can make a nice vegetable lasagna with the onion, tomatoes, courgettes/zucchini and even corn.  

    Then make a nice side salad with the cabbage, radish, beans and beet.

I also have a huge garden and while we don't have all the same veggies, we do have the same problem (it's coming out our ears!).  Pick everything when it's ripe, and freeze and can what you won't be using immediately.  Make salsa with the tomatoes, corn, onion, and radish.  The beans and beets will can well and can be great sides for later.  Or juice your beets, mmmm.  Beans are good in stir-fry or steamed with some onions and garlic.  Radishes are good raw of course, in salad.  Stuffed cabbage!  Steam the cabbage leaves and fill them with diced tomatoes, onions, garlic, tempeh and even potatoes. Close the leaves with a toothpick and bake in the oven for a few minutes (10-15).  Yum, yum!

  9. Ratatouillie (sp?) like the movie!  basically, chop everything up, season simply with salt and pepper, add chicken or beef broth, a dash of white wine and bake.  Serve with grated parmesan cheese.  

  10. stir fry everything with some oil,salt,pepper and garlic.(add in chicken,beef or ostrish strips if u lyk)

    make a huge green salad,cucumber,lettuce..wateva u fancy, spread the veg on top

    sprinkel with feta cheese,almonds and sprouts.

    add ur fav dressing and there u go

  12. I'm not going to come out with loads of recipes, but if you blanch some of those you can freeze them for the winter.
