Recipe or vendor for a good spicy sauce for stir fry, like kung pao?

I love kung pao and other spicy dishes with lots of veggies and some chicken. We'd like to make it at home, but there's no ethnic grocers near us. Anyone know a good online store with reasonable shipping where we can order a quality spicy sauce for making stir fry? Also, if anyone knows a fairly simple recipe to make a good sauce in bulk at home, that would be great. Thanks.

I am a former chef and for Kung Pao, they use a combo of Chinese Hot Garlic Chili sauce and Hot Bean paste, along with a few chili's in the intial garlic, ginger, onion mix, then they stir fry the meat, add the blanched veg, adding the 2 sauces, then a bit of stock, and then finishing it with the thickening slurry.

    Most good Asian store will sell both, and the chili's can be either dired or fresh that is your call. There are several brands Lee K** Kee is my favorite brand.


  2. I understand what you are asking.  

    How about experimenting w/spices till you get versions you like.  ...Using garlic!! (lots) and onion (scallions, etc. on last).  

    Try diff kinds of Soy Sauce (Kinkoman, etc).  

    Keep checking, and requesting, at Costco.  They've had some great stuff there but have only had 'em in like one time (I noticed problems w/the shipping pallets and the condition of the outer cardboard box), e.g.).
