Question:

Recipe suggestion please?

On Labor Day weekend, we have been invited to go camping for the night with my parents. They will be leaving for the campground on Friday morning and staying until Monday. We are not going to the campground (which is an hour and 45 minutes away) until Saturday. The campground is having a picnic and everyone is supposed to bring a covered dish. Anyway, I need suggestions for something that can be easily made, not take up a lot of room (pop up campers have very small fridges) and will not spoil or melt throughout the day (can't contain mayo or cream cheese). My mom is making cookies at home.

Any suggestion?

  1. 3 bean salad

    1 can of red kidney beans, rinsed and drained well

    1 can of green beans, rinsed and drained well

    1 can of chick peas, rinsed and drained well

    1/2 of an onion, cut small

    1 stark of celery, cut small

    1 green pepper, cut small

    1/2 cup of sugar

    1/2 cup of vinegar

    1/2 cup of salad oil

    Combine all together and let sit for a few hours (overnight is best).

    I make this salad all the time, great for BBQ's, it can stay out for a few hours.

  3. Lemon Herb Pasta Salad

    12 oz whole wheat rotini

    2 c broccoli florets

    1 c artichoke hearts drained (packed in water or brine not oil)

    1/2 cup black or kalamata olives, pitted

    1/2 cup red or orange bell pepper, diced

    1 10 oz container of grape or cherry tomatoes (halved)

    1/8 cup white wine vinegar

    1/8 cup lemon juice

    1/4 cup Olive Oil

    1 1/2 tbsp fresh Thyme, Mint, or Basil chopped

    Salt and Peper to taste



    This would be great to take to picnics, barbecues, etc. since it doesn't use mayonaise.



    Bring a large pot of water to a boil, once boiling throw a handful of salt into the water, as it comes back to boil add pasta, cook pasta for about 8 minutes before adding broccoli to the pot.  cook 2-3 more minutes until broccoli is bright green and crisp and noodles are al dente (not too soft)  Whisk all of the wet ingredients, salt, pepper and herbs together in a bowl and coat the broccoli pasta mixture.  Place mixture in a shallow baking pan and cool in the fridge for about 30 minutes.  You can use this time to prepare the rest of the ingredients.  After the noodles have cooled in the fridge add all of the veggies and mix until everything looks evenly dispersed.  You can serve right at this point or up to 3 days later.

    OR

    Fruit Salad....

    take whatever kind of fresh fruit you like (8 cups), plus 2 cans mandarin oranges, and 2 cans of crushed pineapple, 1 tbsp tang

    mix1 pkg sugar free pudding with the juice from the oranges, and the crushed pineapple and tang.  mix it well and toss the fruit in, you may add more fruit if you like, the dressing should cover up to YummY


  4. Brownies, since potato salad is out of the question.

    You can't go wrong with brownies... I'm hungry.
