Recipe suggestions for IBS sufferer/wheat intolerance?

I am a dreadful cook, but its time i learnt.

I have just discovered i suffer IBS and/or maybe wheat intolerant.

Is there any good meal suggestions/recipies that anyone knows of?

Im fed up of being told what to avoid...i know that, i need to know what i can eat...what sort of meals... (i cant live on fruit alone!)

  1. Crispy Pizza with Chicken, Scallions, & Barbecue Sauce

    Barbecue sauce on pizza?

    Makes Two 16 inch pizzas, 8 slices per pizza

    Pizza Dough:

    1 1/2 cup warm water (105-115F)

    1 tablespoon active dry yeast

    4 cups all-purpose unbleached white flour

    2 teaspoons salt

    In a small bowl stir together water and yeast until yeast dissolves. In a large bowl whisk together flour and salt and add yeast liquid, stirring with a wooden spoon until a soft dough forms. Knead dough until smooth and elastic, about 10 minutes, on a lightly floured surface.



      



    Spray a large bowl lightly with cooking oil and transfer dough to bowl. Cover with plastic wrap and a kitchen towel, and let dough rise in a warm, draft-free place until doubled in bulk, about 1 1/2 hours.

    Punch down dough and cut into two pieces, then form each piece into a ball. Put each ball of dough into a separate, lightly oiled large bowl and cover each bowl with a kitchen towel. Place bowls in a warm draft-free place, and let dough rise until again doubled in bulk, about 1 hour.

    Roll out each ball of dough separately into a 16 inch circle and transfer dough to pizza pans or stones.

    Topping:

    2/3 cup Smoky Sweet Barbecue Sauce (or fat-free bottled sauce)

    1 cup cooked shredded skinless organic chicken b*****s

    1/4 cup finely diced scallions

    Smoky Sweet Barbecue Sauce:

    12-14 oz. ketchup

    1/2 cup white vinegar

    1/4 cup honey

    1/2 - 1 teaspoon ground chipotle, to taste

    1/8 teaspoon salt

    Combine all ingredients in a small saucepan and simmer stirring frequently until reduced, about 15-20 minutes. Makes about 1 1/2 cups sauce.

    Preheat oven to 450F. Brush dough very lightly with olive oil. Bake untopped dough for 5-7 minutes or until it is dry but not browning. Remove from oven, spread evenly with barbecue sauce and sprinkle with chicken and scallions. Bake for another 5-7 minutes or until edges are crispy and lightly browned.






  2. Baked potatoes!

    You should be ok with rice, but try small amounts at a time and see how you go.

    If you eat meat, just go with meat and veggies no carbs.

    You can get gluten free flour so can make a nice white sauce with that (flour, butter and milk).

    Other quick and simple things are stuffed veg you can do this with courgettes, flat mushrooms, peppers etc.

    Omelette's are good, healthy and really quick.
