  1. Ingrediants:

    Soya chunks 2 cups

    Onion 1 big

    Tomatoes 2

    Ginger garlic paste 1/2 tea spn

    Butter 1 tea spn

    Kasoori methi 1 tbl spn

    Turmeric a pinch

    Red chili powder 1/2 tea spn

    Garam masala 1/2 tea spn

    Whipped cream 2 tea spn

    Salt

    I have reduced the amount of spices and ginger-garlic in this to suit my taste.

    If more gravy is required, increase the amount of onion and tomatoes.

    Instead of cream, I used 1/2 cup milk.

    Method.

    Wash and pressure cook the soya chunks (with water) for one whistle with little salt. Take out the soya chunks, leave it under cold water, wash again and squeeze the water out of them.

    Heat 1 cup of water and add onion and cook for 5mins. Discard the water and make a paste of onion. Similarly, heat water and cook tomatoes. Discard water, peel the tomatoes and make a paste.

    Heat butter in a pan and fry onion paste till golden brown for about 10 min. Then add the ginger garlic paste and fry for 2-3 min.

    Add tomoto paste, mix well and fry for 5 min. Now add the masalas and cook/fry till the oil leaves the sides.

    Add the soya to the gravy and add enough water to get a thick consistency. Add the kasoori methi and bring it to a boil.

    Remove from heat and add the cream (I added 1/2 cup of milk instead of cream and boiled it till the gravy became thick).

    Serve hot with phulkas or naan.

    Serves : 2-3

  2. Soya chunks need first to be boiled for 20 minutes in water (100g soya chunks + 300 ml water). To improve taste you can add to the water soy sauce, herbs or vegetable stock. Drain the boiled soya chunks and use them in recipes instead of minced meat.

  3. Soya Chunks Vegetable Pulao

    Prep & Cooking: 45 mts, soaking of rice: 15 mts Serves 6

    Ingredients:

    3 cups basmati rice – washed and soaked in water for 15 mts

    1 cup dried soya chunks - washed and boiled in water till soft

    2-3 tbsp vegetable ghee

    1 tsp shah jeera

    2 bay leaves

    2 big onions finely sliced

    1 tbsp grated ginger

    3-4 green chillies slit length wise

    1 cup chopped mixed vegetables like beans, green peas, carrots or potatoes

    ½ tsp turmeric powder

    salt to taste

    3-4 tbsps of fresh mint leaves (pudina)

    3 cups of freshly extracted coconut milk

    2 ½ cups water

    2-3 tbsps lemon juice

    fresh coriander leaves for garnish

    3-4 bread slices (cubed and lightly fried in vegetable ghee) - optional

    8-10 cashewnuts (lightly roasted in ghee till golden brown)

    For Masala Powder (lightly dry roast in a pan and grind to a fine pwd)

    2 green cardamoms

    4 cloves

    2” cinnamom stick

    3-4 pepper corns

    1/4 tsp fennel seeds (optional)

    1 tsp coriander seeds

    1/2 tsp cumin seeds

    1-2 dry red chillis

    1 Heat vegetable ghee in a heavy bottomed vessel. Add shah jeera and bay leaves and stir for a few seconds till the jeera splutters. Add the sliced onions, grated ginger and green chillis. Saute the onions till they turn pink.

    2 Add the mixed vegetables and on medium heat, let them cook. Add salt and keep covered for 4-5 mts.

    3 Add turmeric pwd, masala pwd and combine well. Stir fry for a minute.

    4 Add the cooked soya chunks and keep covered for 2 mts. Add the mint leaves and combine.

    5 Add the coconut milk, let it come to a boil, reduce heat and add the water. Bring to a boil again.

    6 Add the drained basmati rice and mix well. Add salt, if required, at this stage. Reduce heat to medium and let it cook covered with lid.

    7 Finally, once the rice and vegetables are cooked, add the lemon juice, fried bread cubes, fried cashewnuts and garnish with fresh coriander leaves.

    8 Serve with raita, mixed vegetable curry.

    Note:

    The above spices measurements can be categorised as medium spice. You can increase the use of green chillis, cloves, pepper and dry red chillis, if you want a spicer pulao. I have used less spice to suit my toddler’s palate. If you dont have a coconut on hand, replace the coconut milk with water, but the flavor of pulao will differ.

    Soya Chunks Curry Masala

    A cup of Soya chunks

    A couple of medium sized Onions

    A couple of medium sized Tomatoes

    2 – 3 Green chillies

    A few garlic pods

    A ginger k**b

    A few Curry leaves

    ½ tsp Turmeric powder

    2 tbsp masala powder

    Salt – As required

    Oil – As required

    Method:-

    1)Soak the soya chunks in hot water for around 30 minutes or so.

    2)Discard the water and squeeze the excess water off the soya chunks and keep it aside. You can also cut it into halves.

    3)Thinly slice the onions, tomatoes, ginger and garlic.

    4)Heat oil in a pan and add the onions, ginger, green chillies, garlic and curry leaves.

    5)Sauté till the onions turn brown.

    6)Add tomatoes and sauté till it blends well.

    7)Add the masala powder and mix well.

    8)Stir fry very well for a couple of minutes, till the raw smell leaves.

    9)Add the drained soya chunks and mix well.

    10)Add sufficient water along with salt and mix well.

    11)Add a little chopped coriander leaves (optional).

    12)Simmer till the soya chunks are cooked well and the gravy becomes thick.

    Potato-Soya Chunk Fry

    Potatoes - 3 nos (boiled & mashed)

    Soya chunks (meal maker) - 10 nos

    Onion (large) - 1 no (finely chopped)

    Tomato (chopped) - 1 no

    Green chillies (slit) - 3 nos

    Garlic pods - 4 nos (mashed along with skin)

    Curry leaves - 10 - 12 nos

    Turmeric powder - 1/2 tsp

    Mustard seeds - 1/2 tsp

    Salt - As reqd

    Oil for frying

    1)Soak soya chunks in hot water for 10 mins.

    2)Squeeze out the chunks and peel each into 2 - 3 pieces.

    3)Heat oil in a frying pan.

    4)Splutter mustard seeds.

    5)Add chopped onions, slit green chillies, curry leaves and mashed garlic.

    6)When onion becomes glossy, add chopped tomatoes.

    7)When the tomatoes get cooked, mash them with the ladle.

    8)Add turmeric and salt and mix.

    9)Add the boiled potatoes and the soya chunks and stir fry, until everything gets fried.

    10)Remove from stove and transfer to a serving dish.

    Soya Chunks Potato Patties

    2 cups boiled mashed potato

    1 cup chopped onions

    2 cups chopped Soya chunks (washed, soaked and drained)

    1 tbsp chopped ginger

    1 tsp chilli pwd (green chillis can be added instead)

    1/2 cup chopped coriander

    Salt

    Oil for frying

    Mix all the ingredients and make small patties and fry each sides by tossing them gently.

    Chilli Soya Chunks

    1 cup Soya Chunks

    1 cup Tomatoes Chopped

    1/4 cup Onions Chopped

    1 tbsp Ginger and Garlic Paste

    1/2 tsp Garam masala

    1/2 tsp Paparika (for red color)

    1/2 tsp Red chilli powder

    1/2 tsp Cumin and Coriender powder

    1/4 tsp Termeric powder

    2 tbsp Oil

    Salt as per taste

    3-4 tbsp Cilantro chopped

    Pre-preperation: Soak the soya chunks in water for about half an hour, so that the soya chunks are soft to use. Later squeze out the water from the soya chunk. So that later the tomato gravy is absorbed by it.. :) Some tricks while cooking.

    Method

    1. Heat up oil, add ginger garlic paste. Saute for a while and then add chopped onion.

    2. Saute onion til it is transparent. Add chopped tomatoes, add pinch of salt( Salt makes tomatoes cook early) and cook it for 2-3 minutes.

    3. When the tomatoes are cooked smash them in the pan it self to make a gravy kind.

    4. Add all the masalas, 3-4 tbsp of water and cook it for few minutes to make it a thick gravy.

    5. Now add the soaked squezed soya chunks and cook it for 2-3 minutes.

    6. Garnish with cilantro, and Chilli Soya chunks are ready to be served.

    Soya Chunks with Green Peas Curry

    Soya Chunks - 2 cups

    Onions - 1 cup, chopped

    Tomatoes - 4, chopped

    Green Peas - 1/2 cup

    Gram Flour ( Besan) - 1 tbs

    Curd - 1 tbs

    Green Chillies - 3, slit lenghtwise

    Curry Leaves - a few

    Mustard - 1/2 tsp

    Jeera (Cumin) - 1/2 tsp

    Ginger Garlic Paste - 1 tsp

    Turmeric powder - 1/4 tsp

    Dhaniya powder - 1 tsp

    Chilli powder - 2 tsp

    Garam Masala powder - 1 tsp

    Salt to taste

    Directions:

    Wash Soya Chunks & boil them with 2 cups of water for 15 minutes or until water evaporates. Keep aside

    Heat oil in a vessel, when hot, add mustard & allow them to splutter. Add jeera, onions, ginger garlic paste, curry leaves, chillies and saute until onions turn light brown.

    Add tomatoes, besan, green peas, curds, turmeric, dhaniya, garam masala, chilli and salt. Add little water & bring to boil

    When the mixture thickens, add the soya chunks & bring to another boil

    Garnish with cilantro

    Serve Hot with Rice/ Rotis
