I need recipes for some make ahead italian dishes for my parents 25th wedding anniversary. its all italian themed!

I'm not sure of exact recipes because when I cook italian I just kinda know what I'm doing and don't really think about it but heres some ideas (you can look up recipes on google) Gnocchi Quattro Formagi (potato filled pasta in a creamy cheese sauce) Risotto is very easy to make and can be a whole meal, and you can basically put whatever you want in it. Pizza Margerita is a basic thin crust cheese pizza, its very good homemade. Garlic bread is also good. Chicken picatta- fried chicken breast in a lemon sauce with capers, Zuppoli-- fried rice balls with a little tomato sauce and peas.  


  2. My husband's favorite dish is chicken parm:

    I use boneless skinless chicken breast delmonte spegetti sauce, and 4c seasoned bread crumbs, it's easy...

    start with the chicken breast, and turn on a pan of cooking grease, medium.

    make sure the chicken breast are not too thick.

    season the chicken breast with season salt and a little minced garlic, put your bread crumbs in a bag for shaking chicken. put chicken in the bag of bread crumbs, next whip an egg or 2 in a separate bowl, dip the chicken in the egg batter and then back into the bread crumbs, shake well.

    next your ready to start frying!

    make sure they are fully cooked then place them 1 by 1 into the spegetti sauce, I add a little bit of diced tomatoes-- delmonte brand into the sauce prior to dipping.

    don't worry your almost done!

    sprinkle shredded mozzerella, or provalone or both on chicken, broil in oven only until cheese is melted, serve

    your done!!

  5. You could make baked ziti but make the pasta al dente, then it can be put in the oven last minute and not be over cooked.

    Eggplant and/or chicken Parmesan can be prepped also, and placed in the oven when needed.

    Anti pasta can be prepared and kept cold ahead of time.


  6. This peppery, arugula-topped three-cheese pizza is served at Pizza Bianco in Scottsdale, Arizona. Their recipe calls for 4 oz thinly sliced prosciutto on the top at the very end, but this vegetarian version is so very good - you won't miss the meat. The garlic paste is the most important ingredient; you can buy it pre-made but your house will smell great if you make your own (See Roasted Garlic Paste).

    Ingredients

    1 prepared pizza crust

    1/2 cup roasted garlic paste (See Roasted Garlic Paste)

    2/3 cup grated mozzarella cheese

    2/3 cup grated asiago cheese

    2/3 cup part-skim ricotta cheese

    1-2 teaspoon white truffle oil

    1 cup fresh arugula (ideally baby arugula)

    2 tablespoons olive oil

    salt

    fresh ground pepper

    Directions

    1Preheat oven to 425 degrees.

    2Spread the pizza crust with the garlic paste, then top with the mozzarella and Asiago, and spoon dollops of the ricotta over all.

    3Bake for 10-12 minutes or until cheese is melted.

    4Remove from the oven and drizzle with some of the truffle oil. Drizzle the arugula lightly with olive oil and toss, then place immediately on top of pizza. Return to the oven for one minute only, just for the heat to wilt the arugula. Season with salt and pepper.

    5Slice and serve immediately.


  7. Well, you gotta make lasagna for sure. I would make a big batch of meatballs too, just to be safe.

  8. What about make ahead lemonade?  That stuff is good.  Make some of that!  I left you the recipe for it.  It is really good.  You should make that.  

  9. One of my favorites is Rotini with Italian dressing. After the rotini (i like the 3 color ones it just makes it look nicer) has been cooked drain and put in bowl or zip lock bag then add Italian dressing. I also add about 1-2 tbs of Ms. Dash's Tomato and Basil seasoning, and Parmesan cheese. You could also add olives, pepperoni for flavoring too!
