Recipes using brown rice, spinach and mushrooms?

Three of nature's tastiest super foods.. any good vegan or vegetarian recipes using them all? :)

  1. YES, use chopped spinach and mushrooms (any type) to fried rice (use brown rice) and season with salt and pepper.

    Or you may want to stir-fry spinach with mushroom to go with brown rice.

    Or do a spinach and mushroom sauce (like pasta sauce) and pour over the brown rice :)


  2. cook brown rice with the mushrooms. Season to taste.

    Serve in  a bowl and add blanched spinach on top.

    You can also make a stir fry with the mushrooms and spinach with other veggies of choice, season with soy and sesame oil and serve of steamed brown rice

    or layer cooked some brown rice in a ramkin dish, then layer with spinach then layer with mushrooms  etc etc. Steam in vegetable broth then flip and serve. A sort of vegetable tower.

    I forgot..

    Hollow out some butternut squash or any squash (preferably one portion size per squash) or small pumpkin

    mix cooked rice, spinach, mushrooms and scooped squash/pumpkin. Season to taste. Refill hollowed out pumpkin/squash shells with the rice/mushroom/spinach misture and bake for a few minutes until squash is cooked.

    Serve hot. You can add curry  and other spices according to your own taste preferences.

  5. You could cut up your mushrooms and put them on a large baking tray along with onions, green/red/yellow peppers, zuccini, squash, etc. and drizzle with olive oil. Add herbs of your choice and salt and pepper. Bake for about 15 mins. Then you could steam your rice along with spices and use the spinach in a salad or boil it and top your rice with it.

  6. There's a Korean recipe called "bibimbap." It's basically anything that you want mixed with rice and chili paste. It tastes pretty good and it's pretty healthy too.
