Recipes using corns needed?

Besides corn on the cob, I need some new ideas for corn recipes. I get lots of fresh corns every week (i belong to this prepaid farm share so I don't really have a choice).

No dairy products please (so no corn chowder) because we are lactose intolerant.

I would love recipes that you actually tried yourself, not some random recipe that you haven't tried.

  1. Corn Fritters

    Ingredients:

    1/3 cup all-purpose flour

    1/8 teaspoon salt

    1/4 teaspoon baking powder

    1/4 teaspoon paprika

    1 egg, separated

    3/4 cup frozen corn, thawed

    Oil for deep-fat frying

    Directions:

    In a bowl, combine flour, salt, baking powder and paprika. In another bowl, beat egg yolk; stir in corn. Add to flour mixture and mix well. Beat egg white until soft peaks form; fold into flour mixture. In a deep-fat fryer, heat oil to 375°. Drop batter by heaping tablespoonfuls into oil; fry for 3-4 minutes or until golden brown. Drain on paper towels. Yield: 2-4 servings.

  3. butter bean stew just boil butter beans then fry or boil  corn then bake some tomatoes which makes them sweet and then it's done

  4. have you tried adding a cup to you favorite corn bread mix? I also add cajun spice or jalapeno

    my mother used to make corn cakes with corn muffin mix corn kernels and pimento and the cook like dollar size pancakes, sorta like blintz or lahtka

    there is always sukotash( corn lima and carrots)

    throw some into totilla soup

    which is chicken broth 4 cups taco meat 1 lb corn1 cup and salsa1 reg size jar topped with crushed tortilla chips .or in chilli

    mix some with you meat for mexican foods

    cut from cob blanche in salted water for 5 min drain and lay flat on cookie sheet lined with parchment freeze (this will prevent freezing in a large lump) when solid transfer to air tigh bag


  5. Corn & Black Bean Salsa

    3 ears of corn grilled & then taken off the cob

    1 can of black beans drained & rinsed

    1/4 cup diced red onion

    1 pint of cherry tomatoes sliced in half

    1 jalapeno mince

    1/4 cup chopped cilantro

    4 tablespoons of olive oil

    Juice of 1 lemon

    salt & pepper to taste

    Combine all ingredients in a bowl and allow to marinate in fridge for at least an hour. Serve with tortilla chips, put in a burrito or taco, or sprinkle in a salad and top with ranch.

    crab and corn soup

    sliced corn(take it out of the cob)

    crabmeat

    chicken stock

    ground beef(optional)

    onions,minces

    carrots,minced

    spring onions

    eggs

    cornstarch in water

    sautee onions in oil. add carrots stock, corn, crabmeat and ground beef. let it cook.add eggs. salt and pepper top with spring onions.

    Buttered corn!

    boiled corn!

    add some corn in your sauteed veggies!

    it's perfect as is!

    I love corn it's my favorite veg in the world!

  7. I usually use frozen corn, but I'm sure that corn off of the cob would work the same for all the following dishes I make.

    First, I like to take linguica, or kielbasa, and fry it up in a little bit of oil.  I add diced potatoes, grape tomatoes and corn and cook until heated through.  I also add cheddar cheese, but you don't have to.

    I also like to make "Mexican style" recipes such as tacos, chicken fajitas, or steak fajitas where I cook up the meat, then put grape tomatoes, corn, beans, and/or whatever else you like in your "tacos, etc" into the pan.  It makes it very easy for serving to everyone in the soft fajita shells.  Again, I also put cheese, but you don't have to.

    Finally, I love putting corn in my soups.  It gives it a good flavor.  For chicken soup, I take 5 cups of water and 6 chicken bouillon cubes and cook until boiling.  I then add the chicken, veggies (including the corn) and rice or noodles and cook about 15-20 minutes.  Cut up the chicken and put it back in and serve with bread.  For hamburger soup or beef stew, do the same as above, except cook the meat first, and use beef bouillon cubes.  Add whatever veggies and "starch" (rice, potatoes, pasta) you want.

  10. maque choix - it is a Cajun corn that they make in Louisiana.

    Cut the fresh corn off the cob, milk the cob if you can

    onion

    garlic

    bell pepper

    fresh diced tomato

    olive oil

    salt and pepper

    hot sauce or cayenne pepper ( optional)

    sautee all together add a little fresh parsley, or whatever herb you like best.  This is a wonderful side, or you can use it as a condiment for chicken, pork,etc.,,
