Question:

Recommend a good West Indian curry powder please.?

I'll be making a potato and chickpea based vegetable curry this weekend served with either rice or roti. I live in an area where ethnic spices are widely available, I'm just unsure of which curry would be the best to make a west indian style curry.

Well as a former chef from Canada that worked at a resort in Jamaica, and have made my share of Caribbean style currys, the curry powder there is much different than the East Indian type, less cumin, more allspice, mustard seeds and powder, extra turmeric, so as the second fellow said I would make your own as you have said you in an area were spices are widely available.

    Here is my recipe for 1 cup of Jamaican style curry powder

    1/4 cup turmeric powder

    2 tablespoons cumin

    1 teaspoon coriander powder

    1 teaspoon dry mustard powder (English or whatever)

    2 teaspoons ground allspice

    1/2 teaspoon ground cinnamon

    1/2 teaspoon ground nutmeg

    1/2 teaspoon Jamaican thyme or regular thyme

    1/2 teaspoon mustard seed

    Now optional spice like chili flakes for heat, celery salt to and if you like a kick add some black or white ground pepper, I do not as I season my meats before, but with a veggie curry that is like those used in roti and double in Trinidad, season it at the end with those 2 seasonings, as it is hard to remove them and they can be overpowering if added to early or to much in the beginning.

  2. I'm from Trinidad and Tobago..And CUrry is a huge staple in our homes. THe BESTT Curry i can refer to you is "Chief" Brand Curry..it's the best..if you go to any trini's house your bound to find Chief curry somewhere in the cabinets

  3. Spice Hunter brand is good, it's fragrant and you can really taste the allspice.

  4. you might want to consider making your own, if you live in an are that has some of the less common ingredients, but if not, the curry paste  will generally give you more flavor than the powders, and are more varied in choices.  My asian market has green, yellow, red, which goes from mildest to hottest.  My favorite is the garlic curry paste, that has extra garlic.
