Red lentil and Mediterranean veg?

When my kids were little I used to have a recipe I think I got off a lentil packet, I know I used to boil the lentils with stock and pat them down in a flan dish as a sort of pie base and then add tomatoes, onions, courgettes and I think breadcrumbs were used and maybe cheese, and then I baked it, but I can't remember what else I did, the kids loved it.

Does anyone know any recipes like this?

  1. Red lentil and vegetable stew recipe -

    Ingredients

        * 3/4 cup dried red lentil

        * 2 1/2 cups water

        * 2 tablespoons canola oil

        * 1 large onion, halved and thinly sliced

        * 2 cloves garlic, minced

        * 1 teaspoon ground cumin

        * 1 teaspoon garam masala

        * 1/2 teaspoon curry powder

        * salt

        * 4 cups cauliflower floret

        * 2 tomato, diced

        * 1 1/2 cups frozen corn

        * 1 cup peas, fresh or frozen

        * 1/4 cup chopped fresh cilantro

        * hot cooked rice

    Directions

    Add the lentils and water to a saucepan; cover and bring to a boil.

    Lower the heat and simmer for 15 minutes.

    In a large pot, heat the oil over medium-low heat.

    Add in the onion; cook and stir occasionally until onion is slightly limp.

    Add in garlic, cumin, garam masala, and curry powder; cook/stir for about 3 minutes.

    Add in lentils and cooking liquid.

    Season with salt to taste.

    Add in the cauliflower; stir.

    Bring to a simmer, cover and cook for 10 minutes.

    Add in tomatoes, corn, and peas; continue to simmer for 5 more minutes.

    Add in cilantro; stir.

    Season further if desired.

    Serve hot over rice.


  2. It sounds very nice. The nearest thing I know to it is a lentil loaf recipe. My mum has a good recipe for this in one of her cookbooks, but she lives about 90 miles away. I can remember is had lentil, onions, and cheese in it and you boiled the lentils, friend the onions and mixed them together with the cheese and some herbs and then but it in a loaf tin and bake for about 30 mins and serve with a tomatoey sauce.
