  1. How long?

Depends on your ratties.  Certainly quicker if you hold them, which is your next question.

Don't try to rush them, but hold them daily and play with them.  Being gentle and quiet, while encouraging them playful is also good.  These things will help them grow used to your company and learn to like it.  It could take perhaps a couple days, a week, couple weeks..~  It all depends on how much time you spend with them and how much they get used to your presence.  (:

As for the water bowl thing.  I would not recommend that.  Rodents in general don't seem to be very smart about that sort of thing.  They tend to dip their noses under the water and..well, breathe and choke.  This is particularly bad if they get the fluid in their lungs, causing them a trip to the vet and perhaps medicine.  Very pricey..

Chances are, they come out and drink while you're not looking or you're not around, asleep, etc.  They're rodents, so they don't really drink a whole lot to begin with.  My chinchilla has a small water bottle and he normally plays with his water more than he drinks it.  He'll go up and just press his hand to the ball and watch it drip.  Sometimes he'll lap up some of the mess, but other times I just have to clean it up, lol.  My point is, he doesn't drink a whole lot and he's still really healthy.  ^^

It's good you're concerned, but don't freak out too much and stress them out.  Chances are they're just nervous about their new home and will warm up with time and go back to normal before anything serious happens.  (:

you can get much information in this website, If you will check anyone blue link in website.

  3. 1. It all depends on their personality. Normally, not more that a couple of weeks, sometimes, even a couple of days. Just be patient, kind and gental.

    2. It doesn't take much for them to trust you. Handle them a little bit each day. You can also just sit outside the cage and talk to them. Try feeding them from your hands, but if they don't come right away, they don't be discouraged, and give it a little more time.

    3. Yes, its okay to have a water bowl for them in the cage. For my rat, I had the water bottle and the bowl. Just be sure to not fill it up too high, so this it if does topple over, not very much will spill. It may be a good idea to get a holder for the bowl. If  you can't though, don't worry about it. Also be sure to keep an eye on the bowl, so if it does topple over, your ratties wont be sitting in a watery cage for very long. (It shouldn't fall over though. It never did for me.)

Good Luck, and my the fallowing years be filled with happiness for you and your ratties! :)

    EDIT

    About what Nicole said:

Dont worry about them choking. I had a water bowl in my rats cage for a year, and no problems ever occured.

  4. I have found that keep trying to handle them works for pets. Gentle caresses, soft voices and make sure you support him when you hold them so they don't feel like they will fall.
