Allergic to anesthetic?

I've heard horrible stories where a patient goes to have a operation or plastic surgery and they are a allergic to anesthetic and die during the procedure. I was thinking why would'nt they test to see first if they were allergic to anesthetic before they put them to sleep. can someone please explain what happens

These patients most likely didn't die from the anesthetic all together, there are so many complications that could happen during surgery that could cause someone to die.
